PAN SEARED SALMON I

Simply seasoned with salt and pepper, these salmon fillets are pan seared with capers, and garnished with slices of lemon.

Pan Seared Salmon I image

Steps:

  • Preheat a large heavy skillet over medium heat for 3 minutes.
  • Coat salmon with olive oil. Place in skillet, and increase heat to high. Cook for 3 minutes. Sprinkle with capers, and salt and pepper. Turn salmon over, and cook for 5 minutes, or until browned. Salmon is done when it flakes easily with a fork.
  • Transfer salmon to individual plates, and garnish with lemon slices.

I found this recipe in a Fine Cooking magazine and it was suprizingly easy to make and my family now thinks I'm a real chef. And I have to add who doesn't love bacon.

Bacon-Seared Salmon image

Steps:

  • In a liquid measuring cup, combine the balsamic vinegar, honey, rosemary, and 2 tbs water.
  • Cut the bacon slices in half.
  • Lay a slice of bacon on the flesh side of each piece of salmon and arrangle he salmon, bacon side down, in a 12 inch heavy-duty nonstick skillet.
  • Sprinkle the salmon skin with salt and pepper.
  • Set the skillet over medium-high heat and cook until the bacon is glden and crisp about 4 to 5 minutes from when it begins to sizzle.
  • Turn the salmon and continue to cook until the skin is crisp and the salmon is cooked through, 4 to 5 minutes.
  • Take skillet off heat and transfer the salmon to a platter.
  • Pour off the fat and return to medium-high heat.
  • Stir the vinegar mixture well and add it to the skillet.
  • Simmer until slightly thickened, 1 to 2 minutes. Pour over salmon and serve.

Bacon-Wrapped Salmon image

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet liberally with olive oil.
  • Place the salmon fillets onto the baking sheet skin-side-down. Sprinkle the fillets with garlic powder, dill, salt, and pepper. Lay the bacon strips over the fillets to cover completely. Do not overlap the bacon strips.
  • Bake in the preheated oven until the salmon is no longer translucent in the center, 20 to 25 minutes. Turn the oven on to broil and cook until the bacon has crisped, 1 to 2 minutes.

Pan-Seared Salmon with Summer Succotash image

Steps:

  • Preheat the oven to 350 degrees F.
  • For the sauce: In a medium bowl whisk together the creme fraiche, mustard, lemon zest, lemon juice and salt. Cover with plastic wrap and set aside.
  • For the salmon: Sprinkle the salmon fillets on all sides with the salt. Heat the olive oil in a large oven-proof skillet over medium-high heat. With tongs, gently place the salmon, flesh-side down, in the pan. Allow the salmon to cook, undisturbed, for 3 minutes to form a golden crust. Using a spatula, gently flip each fillet. Transfer the pan to the oven for an additional 5 minutes. Remove from the oven and cover with foil to keep warm.
  • For the succotash: Heat the olive oil in a medium skillet over medium-high heat. Add the red peppers and shallots and cook for 4 minutes, stirring often with a wooden spoon. Add the corn, edamame and salt and cook for another 3 minutes. Remove the pan from the heat and stir in the kale, basil and lemon juice.
  • To serve: Spread 2 tablespoons of the sauce in a circle on each serving plate. Top with 1/2 cup of the succotash, and a salmon fillet. Serve with sauce on the side if desired.

Roast salmon with peas, potatoes & bacon image

Steps:

  • Heat oven to 220C/200C fan/gas 7. Tip the potatoes into a large shallow roasting tin and toss with 1 tsp olive oil and some seasoning. Roast for 20 mins until just starting to colour, then scatter over the lardons and return to the oven for 10 mins to crisp up.
  • Remove the tin from the oven, push the potatoes and bacon to the sides and lay the salmon in the middle. Brush with remaining oil, season, then return to the oven and cook for 20 mins more until the salmon is just cooked through. Meanwhile, cook the peas in boiling water for 2 mins and drain.
  • When the fish is cooked, lift it to a serving dish. Stir the peas and spring onions through the potatoes, drizzle with a splash of vinegar, stir through the mint and season to taste. Spoon around the salmon and serve.

  • Heat broiler.
  • Season salmon with salt and pepper; place skin side down in a broiler pan or cookie sheet. Cover with bacon strips.

Seared Scallops with Bacon image

Steps:

  • Heat a large saute pan over medium-low heat, and add bacon. Cook slowly, stirring frequently, until brown and crisp, about 8 minutes. Remove bacon with a slotted spoon, and transfer to a paper-towel-lined plate.
  • Drain excess fat, leaving a thin coat on bottom of pan. Increase heat to medium, add scallops to pan, and sprinkle with salt and pepper to taste. Cook until golden brown and opaque, about 2 minutes per side.
  • Transfer scallops to the serving dish, and add shallots to pan. When shallots are translucent, add white wine; scrape browned bits from bottom of pan with a wooden spoon. Cook until liquid is reduced by half, 3 to 4 minutes. Stir in butter, and pour over scallops; top with reserved bacon. Serve over ribbon zucchini.
