CRISPY BABY POTATO BITES WITH SOUR CREAM AND BACON
Steps:
- Put the potatoes into a large pot and cover with cold water. Bring to a boil over medium heat and add a generous pinch of salt. Cook for 8 minutes so they are tender but still slightly firm. Strain and let them cool. When they are cool, cut them in half and carefully scoop out the insides using a teaspoon or melon baller to form a cup. (Reserve the scooped out insides for Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing).
- Preheat the oven to 400 degrees F.
- Put the potato cups into a large bowl, add the oil, rosemary and season with salt and pepper, to taste. Carefully toss the potato cups to coat them with the oil. Arrange the potatoes, cut side up, on a baking sheet and bake until the cups are browned and crisp, about 15 to 20 minutes.
- While the potatoes are baking, put the bacon into a cold skillet and cook over medium heat until crisp. Drain the bacon well on a baking sheet lined with a brown paper bag. (Reserve 2 pieces of bacon for Round 2 Recipe Shrimp and Potato Salad with Sour Cream and Bacon Dressing.) Chop the remaining 6 pieces.
- In a bowl stir together the sour cream, mustard, 1 tablespoon chives, the chopped bacon, and salt and pepper, to taste. Arrange the potatoes onto a serving plate and fill each with a spoonful of the sour cream and bacon mixture. Garnish with the remaining chives and serve immediately.
BACON-WRAPPED POTATO BITES WITH SPICY SOUR CREAM
A few years back a friend of mine served these at a party and then gave me the recipe. I have been trying to locate my handwritten one and have given up. I found what seems to be the exact same recipe on KITCHN....if you're into watching the Final Four Basketball tournament, these will be a hit! Addictive.

- 1. Preheat the oven to 400 degrees.
- 2. Wash and dry the potatoes. Chop them into 1-inch pieces, keeping the chunks roughly the same size, even if they aren't the exact same shape. Put the potatoes in a medium pot, cover with cold water, and bring to a boil. Season the water with salt. Once the water begins to boil, cook the potatoes for about 3 to 4 minutes, until you can stick a fork into them without too much resistance. You want the potatoes to be almost, but not fully, cooked through (so they won't fall apart during the next steps).
- 3. Drain the potatoes and put them in a large bowl. Add the rosemary, olive oil, salt, and a few grinds of pepper, and toss until the potatoes are evenly coated.
- 4. Cut the strips of bacon in half (with a short, vertical slice). Wrap each piece of potato in a half-strip of bacon, securing it with a toothpick. Put the potatoes on a baking sheet lined with parchment paper or aluminum foil. You may need to cook the potatoes in two batches.
- 5. Cook the potatoes for 15 minutes, then flip each piece. Cook for another 10 to 15 minutes, until the bacon is cooked through and crisp. Mix the sour cream and hot sauce in a small bowl. Season with salt and pepper. Pile the potato bites on a plate and serve alongside the dip.

I got this recipe from another site, I just can't remember where. I have not made these little gems but I'm going to tonight. I will post a picture after I have made and update on the taste. They sound absolutely delish!!

Steps:
- Preheat oven to 400.
- Wash and dry potatoes, cut them into 1" pieces. (try keeping them the same size).
- Put potatoes in a medium size pot cover with cold water and bring them to a boil. Season with salt and pepper to taste. Once the water begins to boil, cook for about 3 to 5 minutes, or until almost done. You do not want to cook them all the way as they will continue cooking in the oven.
- Drain potatoes and put them in a large bowl. Add rosemary, olive oil, salt and a few grinds of fresh black pepper. Toss potatoes until they are evenly coated.
- Cut the bacon in half. Wrap each piece of bacon, secure with a toothpick. (hint: soak toothpicks in water for about 30 minutes so that they do not burn). Put potatoes on a baking sheet lines with foil, might need 2 baking sheets.
- Cook potatoes for 15 minutes, then flip each piece. Cook for another 10 - 15 mintues or until the bacon is cooked throught and crisp.
- Mix sour cream and hot sauce in a small bowl. Season with salt and pepper. Serve with potatoes.

- Preheat the oven to 400 degrees F. Line a rimmed baking sheet with Reynolds Wrap® Aluminum Foil. Set aside.
- Wrap each sweet potato cube with a bacon slice, holding in place with a toothpick. Place on the prepared baking sheet, toothpicks facing up.
- Combine the olive oil, melted butter, cinnamon and pepper, stirring until well mixed. Drizzle the mixture over the sweet potato bites. Sprinkle with sea salt. Loosely tent the toothpicks with damp paper towels and wrap the baking sheet with Reynolds Wrap® Aluminum Foil, being careful not to pierce the foil. Bake until the potatoes are just tender, about 20 minutes.
- Remove the foil and paper towels and return to the oven; bake until the bacon is crispy and the fat starts to render, 15-20 more minutes. Blot the excess fat with the paper towels, then serve.
