Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut the bacon slices in half and wrap each half around a scallop. Use a toothpick to secure in place. Drizzle lemon juice over scallops. Place on a cookie sheet.
  • Bake in a preheated oven for 15 to 20 minutes or until bacon is cooked. Serve warm.

Bacon-Wrapped Jalapeno Poppers image

Steps:

  • Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick spray.
  • In a medium bowl, mix together the cream cheese, Cheddar, cilantro, salt, pepper and green onions.
  • Fill each jalapeno half with a heaping teaspoon of the cream cheese mixture. Wrap the bacon tightly around the jalapenos, overlapping slightly.
  • Place the wrapped jalapenos, cheese-side up and spaced 1-inch apart, on the prepared baking sheet. Refrigerate for 30 minutes.
  • Transfer to the oven and bake until the bacon is crisp, about 25 minutes.

Bacon Wrapped Scallops with Spicy Mayo image

Steps:

  • Heat the broiler. Wrap each scallop in a piece of bacon and secure it with a toothpick. Place the bacon wrapped scallops onto a baking sheet, drizzle them with olive oil, and season them with salt and pepper. Cook them under the broiler for about 10 to 15 minutes until the bacon is cooked through, turning once.
  • Make the spicy mayo by combining the mayonnaise, chili paste, lime juice, and chopped cilantro. Stir well and refrigerate until ready to use.
  • To serve, carefully peel away the lettuce leaves and line a large platter with the lettuce cups. Top each with a bacon wrapped scallop, 2 slices of avocado, and a spoonful of spicy mayonnaise. Garnish with cilantro leaves.

Steps:

  • Heat a slotted broiler pan in a preheated 450 degrees F oven.
  • Pat scallops dry and quarter them. Combine the vinegar, sugar, garlic and ginger and marinate the scallops 10 minutes. Arrange the bacon slices in a single layer. On each half-slice of bacon, place 2 slices of water chestnuts. Top with a scallop piece and wrap with the bacon, secure with toothpick. Place scallops on sides, exposed side facing out. Draw garlic and ginger from vinegar and drizzle over scallops then bake 10 minutes, turning once.

  • Arrange bacon in a large skillet and cook over medium-high heat, turning occasionally, until lightly browned but still pliable, about 5 minutes. Drain the bacon slices on paper towels.

Steps:

  • Stir together maple syrup, soy sauce, and Dijon mustard in a bowl until smooth. Add the scallops, and toss to coat. Cover bowl with plastic wrap, and marinate at least one hour.
  • Preheat oven to 375 degrees F (190 degrees C). Line a rimmed baking sheet with a sheet of aluminum foil.
  • Arrange bacon pieces on baking sheet so they do not overlap. Bake in preheated oven until some of the grease has rendered out of the bacon; the bacon should still be very soft and pliable, about 8 minutes.   • Preheat oven to 350 degrees F. Arrange an oven safe rack on top of a baking sheet (line baking sheet with foil first for easy clean up). Arrange bacon on rack in a single layer. Bake in preheated oven until fat is mostly rendered but bacon is still very flimsy, about 20 minutes.
  • Wrap a piece of bacon around each scallop with a couple pieces of jalapeno. I recommend having the meat side of the bacon down as the top will get more browned. Secure by piercing with a toothpick all the way through. Set on rack you cooked bacon on (to avoild smoking, replace foil). Drizzle olive oil (or spray) over tops of scallops.
  • Set oven to broil with the rack in the middle. Once hot, add bacon wrapped scallops. Broil until internal temperature reads 145 degrees F. This should take 5-10 minutes.
