BACONIZED CORN

LOVE this - from the Mennonite Community Cookbook. My mother made a skillet version of this a lot when I was a kid. She used fresh corn from our garden. Of course, fresh corn cut off the cob makes this recipe even more yummy! A great summer recipe.

Steps:

  • Mix corn with salt, pepper and sugar.
  • Place corn in a buttered baking dish.
  • Cover entire dish with finely diced bacon.
  • Bake at 350F for 35 minutes or until bacon is crisp.

4 cups fresh corn or 4 cups canned corn
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 1/2 teaspoons sugar
1 cup finely diced bacon

Found this in an old Mennonite Cookbook circa 1950! This collection of over 1,100 recipes comes from most of the Mennonite communities in the United States and Canada. Steps:

  • 1. Turn oven to 350 D/F.
  • 2. Place corn in a greased baking dish. Season with sugar, salt and pepper. Cover entire top of dish with finely diced bacon. Bake for 35 minutes of until bacon is crisp.

Steps:

  • In a large skillet, heat the bacon over medium heat until sizzling. Add the corn and season with salt and pepper. Cook until tender, about 15 minutes. Taste and adjust for seasoning with salt and pepper. Serve immediately.

2 slices bacon, cut into lardons
Scraped kernels from 6 ears fresh sweet corn (about 3 cups)
Coarse kosher salt and freshly ground black pepper

Bacon-Wrapped Cheesey Corn image

Steps:

  • Set up grill for direct cooking over medium heat.
  • In a small bowl, sprinkle cheese sauce mix over mayonnaise; stir thoroughly. Brush corn with mixture. Wrap each ear with a bacon slice; wrap in foil.
  • Place on hot grill. Cook for 25 to 30 minutes or until corn is tender and bacon is cooked, turning often. Serve hot.

3 tablespoons four-cheese sauce mix
1/4 cup mayonnaise
4 ears corn, shucked and cleaned
4 slices pre-cooked, thick-cut bacon

Grilled Bacon-Wrapped Corn on the Cob image

Steps:

  • Preheat an outdoor grill for high heat.
  • Sprinkle each ear of corn with Cajun seasoning, salt, and pepper, and wrap each ear with 2 slices of bacon, covering the ear as completely as possible. (A big ear might need 3 pieces of bacon.) Wrap the ears in aluminum foil, twisting the ends tightly to seal.
  • Place the wrapped corn on the preheated grill, and grill on high heat until the corn is hot, about 10 minutes per side. Turn the heat to Low, and grill the corn until the bacon is cooked and the corn is tender, about 45 minutes.
