SLOW COOKER BAKED BEANS

Slow Cooker Baked Beans image

Steps:

  • Drain the beans, cover with fresh water and bring to a boil. Simmer for about 1 hour.
  • Drain and rinse the beans, then transfer them to a slow cooker insert. Add the tomato puree, brown sugar, molasses, dry mustard, bacon, onion and 1 1/2 cups water and stir to combine. Cook on low until the sauce is thick and syrupy, 8 to 10 hours.
  • Before serving, stir in the cider vinegar and season to taste with salt.

1 bag dried navy beans, soaked overnight
One 6-ounce can tomato puree
1/2 cup brown sugar
1/4 cup molasses
1 tablespoon dry mustard
8 slices bacon, cut into 1-inch pieces
1 large onion, diced
1/4 cup cider vinegar

Steps:

  • Melt the butter in a saucepan and fry the bacon until almost cooked. Add the jalapenos, onions and bell peppers and saute for 5 minutes. Add the beans, mustard, barbecue sauce, ketchup and hot sauce, and heat through.

2 tablespoons butter
6 slices bacon, diced
1 jalapeno, seeded and chopped
1 large onion, diced
1 large green bell pepper, diced
1 large red bell pepper, diced
1 large yellow bell pepper, diced
Four 28-ounce cans baked beans, drained
1/2 cup mustard
1/4 cup barbecue sauce
1/4 cup ketchup
Several dashes hot sauce

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 325 degrees fahrenheit. Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels. Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes. Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients). Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

Steps:

  • Adjust the oven rack to the lower-middle position and preheat the oven to 325 degrees F.
  • Fry the regular chopped bacon in a large, deep skillet until the bacon has partially cooked and released about 1/4 cup drippings. Add the onions, peppers and jalapenos, and saute until tender, about 5 minutes. Add the beans, barbecue sauce, brown sugar, vinegar, ketchup, mustard and chipotles, and bring to a simmer. (If the skillet is not large enough, add the beans and heat to a simmer and then transfer to a large bowl and stir in the remaining ingredients). Pour the flavored beans into an aluminum pan. Top with the uncooked slices of bacon (you can halve the slices if you like). Then bake until the beans are bubbly and the sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
