SOUTHERN BLACK-EYED PEAS
I find pork the secret to a good black-eyed pea recipe. A double dose of ham for flavor and slow and gentle cooking creates this perfect side dish. -Emory Doty, Jasper, Georgia

Steps:
- Place peas in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and rinse peas, discarding liquid; set aside., In the same pan, saute onion in oil until tender. Add the pork belly, garlic, bay leaves, thyme, pepper flakes and pepper; cook 1 minute longer., Add the broth, ham hocks and peas; bring to a boil. Reduce heat; simmer, uncovered, for 35-40 minutes or until peas are tender, stirring occasionally and adding more water if desired., Discard bay leaves. Remove ham hocks; cool slightly. Remove meat from bones if desired; finely chop and return to pan. Discard bones. If desired, top with additional fresh thyme.

This is one of the many recipes from my grandmothers cookbook. She passed away in May of 2005 and I am recording her wonderful recipes for my family and the many generations that will follow. Steps:
- Cut squash and onion in pieces, boil together, then reduce heat until tender.
- Drain & mash squash some.
- Combine squash,onion, eggs, bread bits, butter,sugar, salt .
- Put into a 3 quart dish that has been oiled.
- Bake at 350 until lightly browned.
- Sometimes I toss in some velveeta - when the kids were small they liked it with the cheese.

THE BLACK-EYED PEA'S BAKED SQUASH
I love this squash recipe served at the Black-Eyed Pea Restaurant. The recipe was posted in response to a request, but it's been a family favorite ever since it was posted in the local paper years ago. A true Southern favorite.

Steps:
- Cut the tops off the squash.
- Cut in 3- 4 pieces.
- Boil in water til tender (just a few minutes).
- Drain and mash.
- Add remaining ingredients.
- Place in casserole dish.
- Cover with light layer of breadcrumbs.
- Bake at 350 til lightly browned (about 10- 15 minutes).

This is from The Unwatched Pot. The recipe doesn't say whether or not to drain the beans. I'm guessing no. Are they still "baked beans" if they don't actually get baked?

- Fry bacon until crisp; discard fat.
