CHOP SUEY CASSEROLE
It's fast and easy and you'll like it for potlucks or large family meals. For smaller amount, freeze 1/2(unbaked and without noodles) for a busy day!

Steps:
- 1. Lightly brown beef and onions together in a skillet. Using a 4-quart baking dish, combine the vegetables, soup, water,rice,pepper,bean sprouts, water chestnuts,and soy sauce.. Stir in prepared meat mixture. Cover the dish and bake at 350^ for 1 hour and 15 minutes, stirring occasionally, adding water if necessary. Uncover and sprinkle with the noodles. Return to oven and bake uncovered for another 10 minutes.

Steps:
- 1. Heat the butter in a large pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook, stirring, for about 1 minute. Then add the ground beef and continue to cook, stirring and breaking up the chunks of meat with a spoon. Cook until the meat is no longer pink, about 7 minutes. Sprinkle the herbs and pepper over the meat, add salt to taste, and mix in well.
- 2. Add the canned tomatoes with their juices, the tomato sauce, paste, and juice. Add sugar to taste. Simmer while you cook the pasta.
- 3. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally, until al dente. Drain. Mix the macaroni into the chop suey. Serve hot.
CHOP SUEY
This is the fast and easy chop suey recipe that my mother always made, and we love it 'as is', but you could substitute a can of Chinese mixed vegetables for the bean sprouts if you like more color and texture. Serve over hot rice, topped with chow mein noodles and soy sauce, if desired.

- Heat shortening in a large, deep skillet. Sear pork until it turns white, then add onion and saute for 5 minutes. Add celery, hot water, salt and pepper. Cover skillet and simmer for 5 minutes. Add sprouts and heat to boiling.
- In a small bowl combine the cold water, cornstarch, soy sauce and sugar. Mix together and add to skillet mixture. Cook for 5 minutes, or until thickened to taste.

AMERICAN CHOP SUEY II
This is an old family recipe. My family loves it. It's quick and easy. Elbow macaroni and ground beef are combined in a tomatoey sauce. The kids will eat this one!

- Cook macaroni according to package directions.
- Meanwhile, in a separate large skillet over medium high heat, saute the ground beef and the onion for 5 to 10 minutes, or until meat is browned and crumbly. Drain thoroughly and leave the meat and onion in the skillet. Pour the two cans of tomato soup into the skillet and stir well to combine.
- When noodles are done, drain thoroughly and return noodles to the pot. Add the hamburger mixture from the skillet to the pot. Mix well and season with salt and pepper to taste.

- Brown the ground beef with onions and celery; add the rest of the ingredients (except the bean sprouts) and stir together well.
- Butter or grease casserole dish.

BAKED CHOP SUEY - AMERICANIZED!
I grew up having this at least once a month. I've tweaked it over the years but it is still close to what my mother made. I hope you enjoy!

- 1. Cook the ground chuck, drain and rinse. Optional: diced onions, diced celery about 1/2 cup each. Pepper and garlic powder to taste.
- 2. Pre-heat oven to 350 degrees. In a baking dish put the meat, both cans of soup and the rice - mix thoroughly. Add water and soy sauce, the water should just cover the meat mixture. Use the soup can to measure out the rice and the water. Put in oven and bake for 35 minutes or until rice has cooked, using all the liquids. For the last 10 minutes, sprinkle chow mein noodles over the top and put back into the oven for 10 minutes. Remove from oven and let sit for 5 minutes before serving.
- 3. Alternate cooking plans: Instead of baking in the oven, you can use the microwave for a 35 minute cooking time. Place in microwave on high for 20 - 25 minutes, or until rice has cooked using all liquids. Stir, then put the noodles on top and cook for 10 minutes. Let rest for 10 minutes before serving.
- 4. My mother used to make cherry jello to serve with this and believe it or not, it was delicious...even though it would melt into the meal! I never had time, as a working mom, to make the jello after work but no one ever walked away hungry!!
