HOT HAM-AND-CHEESE CROISSANT
This crispy, cheesy, meaty croissant showcases Dijonnaise (equal parts mayonnaise and Dijon mustard), one of the test kitchen's favorite condiments. It's also an easy way to enjoy leftover ham.

- Preheat oven to 375 degrees. Cut a pocket in the croissant. Spread mayonnaise and mustard in pocket. Stuff with ham and cheeses; place on a baking sheet. Bake until cheese melts, 10 to 12 minutes; serve.
BAKED HAM 'N' CHEESE CROISSANTS
This baked ham and cheese croissant recipe is one of my favorites. It makes for a delightful brunch, lunch or light supper.

- Place onions and butter in a large microwave-safe bowl; cover and microwave on high for 2-3 minutes or until onions are tender. Stir in the mustard, poppy seeds and lemon juice. Cover and microwave on high for 1 minute or until heated through., Spread onion mixture over cut sides of croissants. On bottom halves, layer ham and cheese; replace tops. , Wrap each sandwich in foil. Place on a baking sheet. Bake at 350° for 20-25 minutes or until cheese is melted.

Use good domestic Swiss cheese, and good ham, also making sure to remember to bake them long enough to melt the cheese and warm the ham.

- Preheat oven to 350 degrees. Cut aluminum foil into pieces large enough to hold each sandwich.
- Whisk or beat the butter with the mayonnaise, mustard, onion powder and poppy seeds.
- Spread sauce on both sides of each bun, if desired, sauce quantity may be doubled, and more can be used, although not all of it will be required.
- Place ham slices on the bottom side of each bun. Put cheese slices evenly on top of ham.
- Replace bun tops, wrap in foil.
- Bake sandwiches, on a sheet tray, for up to 25 minutes, unwrap and serve.
- If desired, buns may be frozen thoroughly, and baked at 350 for 1 hour, up to 1 month later.

BAKED HAM AND CHEESE CROISSANT SANDWICHES
Steps:
- Heat oven to 350 degrees.
- Cover a large baking sheet with aluminum foil.
- Split your croissants in half and place on the baking sheet.
- In a small bowl, mix together cream cheese and Dijon mustard. Spread some of the cream cheese mixture on one half of each croissant.
- Layer sliced ham and sliced cheese on top of cream cheese mixture.
- Top with the other half of the croissant.
- Bake for 12-15 minutes and serve immediately.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
- Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

HAM AND DIJON CROISSANT SANDWICHES
Melt-in-your-mouth baked croissant sandwiches of thinly sliced ham, Swiss cheese, and a delicious buttery Dijon and poppy-seed sauce! Perfect for luncheons or entertaining, or packed into picnic lunches; great served warm, or at room temperature. Use as much ham and cheese as you like! Sandwiches are easily made up in advance and individually wrapped in foil, then refrigerated or frozen (use a freezer bag) for later use. Defrost overnight in the fridge, then bake as directed. Or, if frozen, bake at 300 F for about 1/2 hour until warm. If using mini-rolls, you may place them in a buttered baking dish and bake for the specified amount of time (no need to individually wrap)--I've also microwaved them. Enjoy!

- Preheat oven to 350°F.
- In a small bowl, combine softened butter with the Dijon, chopped onion, and poppyseeds.
- Spread generously onto both (inner) sides of the split croissants.
- Place one slice each of ham and Swiss cheese into each croissant, and replace tops.
- Wrap each croissant or Hawaiian roll in a square of foil, sealing carefully. At this point sandwiches may be baked right away, or refrigerate or freeze (use a freezer bag) for later use.
- Bake in a preheated 350 F oven for 15-20 minutes, until hot. If frozen, bake at 300 F for about 25-30 minutes, until heated through.
- Serve hot, or at room temperature. Good sides are soup or salad, and fresh fruit for dessert.
- NOTE: If using mini-rolls, you may bake them in a buttered baking dish (no need to individually wrap).
