Steps:
- Preheat the oven to 400 degrees F. Heat the olive oil in a medium nonstick skillet over medium heat. Add the onion and thyme sprigs, season with salt and pepper and cook, stirring occasionally, until the onion is caramelized, 15 to 17 minutes (reduce the heat if the onion is getting too dark). Add the Worcestershire sauce and cook until the skillet is dry, about 1 minute. Add the beef broth and cook, stirring, until the mixture is slightly saucy, 2 to 3 minutes. Remove from the heat and let cool slightly; discard the thyme sprigs and stir in the chives.
- Using a small serrated knife, hollow out the bread loaf, leaving a ½-inch-thick shell; reserve the cut-out bread. Drizzle the inside of the bread with olive oil and season with salt and pepper. Fill the loaf with half of the brie, then top with the onion mixture and the remaining brie; transfer to a baking sheet. Bake until the brie melts and the bread is toasted, about 15 minutes.
- Meanwhile, slice the reserved bread into pieces and arrange on a separate baking sheet; drizzle with olive oil and season with salt and pepper. Bake until toasted, 5 to 8 minutes. Top the dip with more chives and serve with the toasted bread and crackers and/or crudites.

- Melt butter in large sauté pan over medium high heat. Add onion slices with salt and pepper, toss to coat in melted butter, and then stir occasionally only to prevent burning.
- Cook until the onions turn a deep golden brown and have caramelized. This can take 15-25 minutes. Once caramelized, add the sugar and balsamic vinegar.
- Stir to combine and cook for several more minutes until all of the moisture has evaporated. Set aside and allow to cool.
- Unfold puff pastry sheet and set out on large cutting board. Roll the puff pastry to a large enough square so that it can fully wrap around the brie, onions, and fresh thyme. Set the brie wheel on the center of the puff pastry and top with the caramelized onions.

- Place a large skillet over medium-high heat, and drizzle in about 2-3 tablespoons of oil; once hot, add in the sliced onions along with a pinch of salt and pepper, and cook the onions, stirring occasionally, until they become deeply golden-brown and caramelized, about 20 minutes.
- Once golden, stir in the teaspoon of sugar, followed by the balsamic vinegar, and allow the mixture to bubble up and reduce, stirring to incorporate; allow the onions to cook for another 3-5 minutes, stirring frequently now, until jam-like and deeply browned; then, add the 1 teaspoon of thyme leaves, stir to combine, and remove from pan and allow to cool (you should have roughly 1/2 cup).
- To prepare the baked brie, lightly flour your work surface, and roll out the thawed puff pastry sheet to about 1/8” thickness, a bit larger than the wheel of brie (trim the puff pastry a little bit if it's considerably too large for your brie); place the brie in the center of it, spoon over top of it the cooled, balsamic caramelized onions, then fold the puff pastry sheet over top to cover everything, creating a little “package” with pleats.
- Place the wrapped brie “package” onto a small baking sheet lined with parchment paper, and very gently brush some egg wash over the puff pastry (avoid allowing it to pool underneath), and place into the fridge to chill for 30 minutes (or even overnight), covering lightly with plastic wrap.
