FRENCH TOAST-SAUSAGE CASSEROLE
An easy, overnight breakfast casserole that puts the sausage right in with the French toast!

Steps:
- In 10-inch nonstick skillet, cook sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain.
- Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In baking dish, arrange 4 of the bread slices, cutting as needed to fit dish. Spoon sausage over bread. Top with remaining 4 bread slices.
- In large bowl, beat eggs, half-and-half, milk, granulated sugar, cinnamon, salt and vanilla with whisk until well blended. Pour evenly over bread. Cover; refrigerate 8 hours or overnight.
- Heat oven to 350°F. Uncover baking dish. Bake 40 minutes or until golden brown and set. Sprinkle with powdered sugar. Serve with syrup.

SAUSAGE STUFFED FRENCH TOAST

- Cook sausage according to package directions; cool slightly., Cut a pocket in one side of each slice of bread. Fill pockets with sausage and cheese., In a shallow bowl, whisk together eggs, milk and sugar. Soak bread in egg mixture, about 1 minute per side. Cook on a greased griddle over medium heat until golden brown on both sides. Serve with syrup.

This easy-to-assemble casserole can be put together the night before, refrigerated and baked just before serving on Mother's Day. This also is an easy recipe for the kids to help with . Let them whisk the eggs, layer bread and pour the egg mixture.

Steps:
- Coat a 9x9-inch square baking pan or a small casserole dish with cooking spray.
- In a medium sauté pan over medium-high, crumble sausage and cook until lightly browned, 6-8 minutes. Drain any excess oil in the pan, then set aside.
- In a medium bowl, whisk together eggs, milk and maple surup.
- To assemble, fit 4 slices of the bread into the bottom of the prepared pan. Yo may also need to trim the bread. Arrange sausage meat over bread, then top with 6 slices of cheese, breaking as needed to arrange in a single layer over all of the sausage and bread.
- Arrange remaining bread over the cheese, then top with remaining cheese. Pour egg mixture over top.
- At this point, the pan can be covered and refrigerated overnight, if desired.
- Otherwise, heat oven to 375F and let the french toast rest for 30 minutes to allow the bread to absorb the egg. Bake for 30-40 minutes or until puffy, golden brown and set. Serve warm.

Steps:
- Spray a 13 x 9 inch baking pan with vegetable spray.
- Layer 10 slices of French bread in bottom of pan.
- You can cut slices to fit.
- Top evenly with cream cheese slices, then with remaining French bread slices.
- In a large mixing bowl, whisk together egg substitute, milk, vanilla extract, syrup, and cinnamon.
- Pour over bread, coating all of the bread.
- Cover with plastic wrap and refrigerate overnight or at least 8 hours.
- Remove from refrigerator and let stand at room temperature for 15 minutes.
- Preheat oven to 350 degrees.
- Bake for 1 hour or until all liquid is absorbed and the French bread is set in the center.
- To keep bread from browning to much, lay a piece of aluminum foil over top when French bread just begins to brown.
- Cut into 12 pieces and serve with raspberry syrup.

- The night before, grease a large casserole dish. Check that you can lay out 6 slices of bread evenly across the bottom of your casserole dish. If they do not fit, trim the bread as needed so you can fit the stuffed french toast sandwiches evenly. I use this 13-inch x 10-inch casserole dish.
- Spread on a thick layer of the cream cheese mixture on a slice of bread and close it with a second slice to make a sandwich. Place it in the casserole dish. Repeat with the remaining slices. You will want to divide up all of the cream cheese mixture evenly.

- Cut the bread into 1-inch cubes and cut the breakfast links into 1-inch pieces. Lightly spray a 9x13-inch baking dish with nonstick cooking spray. Mix the bread and breakfast links together and pour it into the baking dish. Set aside.
- In a medium bowl, whisk together the brown sugar, eggs, whole milk, heavy cream, cinnamon, and vanilla. Evenly pour the mixture over the bread. Press the bread down into the mixture to help it absorb the egg mixture. Cover with plastic wrap and keep in the fridge overnight (or at least 4 hours) to allow the bread to absorb the egg mixture.
- Make the crumble topping by combining the brown sugar, flour, cinnamon, and pecans. Add the butter and mix until the butter incorporates and small clumps form. You can use the back of a spoon to press the mixture together or use your hands to pinch it all together. (This step can be done in advance and stored covered in the refrigerator or right before baking.)
- When ready to bake, remove the casserole from the fridge and allow it to sit at room temperature for at least 30 minutes to come to room temperature. (Putting a cold dish into a hot oven may cause the dish to shatter.) Preheat the oven to 350°F. Once the dish is at room temperature, sprinkle the crumble topping over the casserole and bake for 45 to 50 minutes or until golden brown. Serve topped with fresh fruit and maple syrup if desired.
