BAKED SWEET POTATO BALLS
This is a must at our house on Thanksgiving and Christmas.

Steps:
- Drain sweet potatoes and put into large mixing bowl. Mash the potatoes with butter or margarine. Salt to taste.
- Hand pat mixture into 3 inch diameter balls. Roll in crushed corn flakes and put into 9x12 inch greased baking dish. Pour maple syrup evenly over all balls.
- Bake at 325 degrees F (165 degrees C) for 40 minutes. The last fifteen minutes put a marshmallow over each ball.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13 inch baking dish.
- Bring a pot of water to a boil. Add sweet potatoes and cook until tender, about 15 minutes. Drain and mash with butter, sugar, milk, salt and lemon zest. Shape mixture into balls, with a marshmallow in the center of each. Roll in cereal crumbs and place in prepared dish.
- Bake in preheated oven for 20 minutes, or until marshmallows begin to ooze.

CRISPY POTATO BALLS

- Mix together the Mashed Potatoes, flour, egg, parsley, Parmesan, mozzarella and black pepper in a bowl. Place the breadcrumbs on a large plate.
- Form the potato mix into 12 golf-ball-sized balls. The mixture will be a little sticky, so wet your hands a little as you go. Place the balls directly on the breadcrumbs and roll each ball in the breadcrumbs, pressing to make sure they stick well. Put the breadcrumbed balls on a plate.
- Heat 2 inches of oil in a deep skillet or Dutch oven to 375 degrees F, or until the mixture bubbles when a breadcrumb is added.
- Add the balls to the oil and fry until golden brown on all sides, 3 to 5 minutes total. Remove to a paper towel-lined plate and sprinkle immediately with salt.
- Garnish with more Parmesan and parsley.
- Peel and cut the potatoes into pieces of approximately the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook until a fork easily slides into the potatoes with no resistance and the potatoes almost, but not totally, fall apart, 30 to 35 minutes.
- Preheat the oven to 350 degrees F.
- Drain the potatoes in a large colander. Place them back into the dry pot and put the pot on the stove. Mash the potatoes over a low heat, allowing all the steam to escape.
- Turn off the stove and add the butter, cream cheese and half-and-half. Mash, mash, mash! Add the seasoned salt and black pepper.
- Stir well and place in a medium baking dish. Throw a few pats of butter over the top of the potatoes and place bake until the butter has melted and the potatoes are warmed through, a few minutes.
BAKED SWEET POTATOES
Sweet potatoes are in the same family as other potatoes but cooking them requires a different approach to get the fluffy interior and sweet caramelized flavor we all love. After testing several techniques-wrapping in foil, pricking and not pricking, using a roasting pan-we found the following method delivered on all fronts, with minimal effort. Pricking with a fork allows steam to release and the potato flesh to separate from the skin, something that didn't always happen otherwise. Baking the potatoes on a wire rack nested in a baking sheet also helped the potatoes cook more evenly (and made cleaning up much easier). Lastly, allowing the potatoes to rest in the turned-off oven for 30 minutes after baking allowed the flavors to develop even further, though you can skip this step if you are short on time.

- Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil, then set a wire rack inside the baking sheet.
- Prick each of the sweet potatoes 5 times with a fork and place on top of the prepared rack, keeping space between potatoes to allow heat to circulate. Bake the sweet potatoes until a paring knife can easily go through without resistance, about 1 hour. Turn the oven off and let the potatoes rest inside for 30 minutes more. - Mold a spoonful of the sweet potatoes around each marshmallow; roll in cornflake crumbs. Place in a greased shallow 1-1/2-qt. baking dish. , In a saucepan, bring brown sugar, butter and milk to a boil; pour over the balls. Bake, uncovered, at 350° for 15 minutes.

NO-BAKE BIRDIE SWEET POTATO BALLS (BIRD TREAT)
These are an excellent staple to have; when you need a quick treat, just defrost a few of these balls. Aside from softening the sweet potato in the microwave, this recipe does not require you to do any cooking at all. It's a relatively simple recipe you can make that will provide with a big batch of treats that freeze well. The fresh fruits and/or vegetables are especially nutritious for your bird, and the cereal give the balls a pleasant crunch. Times and yield are approximate.

- Prepare the sweet potato by piecing it several times with a knife or food skewer, then place the potato in the microwave and cook it on high power for about 5-9 minutes, or until the potato is tender.
- Half way through the cooking, turn the potato over; when it is finished cooking, set it aside on a plate or other surface and allow it to cool considerably.
- Once the potato is cool enough to handle, add the remaining ingredients to the mixing bowl, then use an electric mixer on a high speed to thoroughly beat all the ingredients together; blend for several minutes, or until everything has been reduced to tiny chunks, and the mixture is consistent.
- Check the consistency of the mixture, it shouldn't be too thick; you should be able to mold it easily with your hands and have it hold its shape- adjust the consistency by adding water as needed.
- Line a small baking sheet or tray with waxed paper; begin to form some marble sized balls of the mixture by tearing off chunks and rolling them between your hands.
- Arrange each ball onto the prepared baking sheet, then repeat with the remaining mixture until you run out of mixture can no longer make any more balls.
- The balls are ready to be served immediately.
- Promptly place any leftover in the refrigerator until ready to use; Alternately, you can individually wrap each ball in waxed paper, foil, or plastic wrap, if space is an issue or you don't have a baking sheet to use.
- Defrost the frozen balls before serving.

- Preheat the oven to 375 degrees F. Place the drained sweet potatoes into a large mixing bowl; mash well, add the egg and 3/4 tsp. of salt, mashing again until the sweet potato mixture is well combined and rather “fluffy” in texture. (Feel free to use an electric mixer.)
- Using your hands, place some of the prepared sweet potato mixture into your palm, then add a marshmallow into the center; top with a bit more sweet potato mixture, forming it around the marshmallow, making each sweet potato ball slightly smaller than a tennis ball in size. (I like to divide my sweet potato mixture in half, then divide each half into 6 portions or so, which helps to make the 12 sweet potato balls more even in size.)
- Place the crushed corn flakes into a shallow dish. Gently roll each sweet potato ball in the corn flakes, packing them lightly with your hands so they stick. Place te balls side-by-side, but not touching, into a greased 9 x 13 baking dish. Lightly spray the top of of the sweet potato balls with nonstick spray.
