ROASTED WILD TURKEY

Since we have avid hunters in our family. I will quite often prepare game. Once it's stuffed with apples and topped with a unique combination of sauces, this wild bird requires no basting and cooks up nice and moist.

Roasted Wild Turkey image

Steps:

  • Preheat oven to 325°. Place turkey on a rack in a roasting pan; place apples in turkey cavity. Place potatoes, carrots and onions around turkey. Pour water over vegetables. Combine seasoned salt, salt and pepper; rub over turkey. Combine remaining ingredients; spoon over the turkey. , Cover and bake until a thermometer reads 170°, 3-1/2 hours, basting occasionally if desired. Turkey may be uncovered for the last 30 minutes for additional browning if desired.

1 wild turkey (10 to 15 pounds)
2 large apples, quartered
6 to 8 medium red potatoes, quartered
2 pound baby carrots
2 medium onions, sliced
2 cups water
1-1/2 teaspoons seasoned salt
1 teaspoon salt
1 teaspoon pepper
1/2 cup maple syrup
1/4 cup French salad dressing
1/4 cup barbecue sauce
2 tablespoons ketchup
2 tablespoons steak sauce
1 tablespoon lemon juice

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Salt and pepper turkey.
  • 3. Melt butter and add the remaining ingredients.
  • 4. Marinate turkey overnight.
  • 5. Cook in marinade in covered roaster.
  • 6. Cook about 20 minutes per pound.

1 (8-10 pound) wild turkey
salt and pepper
4 stick butter
2 can(s) (13 3/4 oz.) chicken broth
1 onion, chopped
1 carrots, chopped
3 sprig(s) parsley
1 celery stalk, chopped
1 bay leaf
1 pinch thyme

Roast Boneless Turkey Breast image

Steps:

  • 1. Preheat oven to 350 degrees
  • 2. Mix 1/4 cup butter, garlic powder, paprika, Mrs. Dash, salt, and black pepper in a bowl.
  • 3. Rub half the butter mixture over the turkey breast and underneath the skin.
  • 4. Tent turkey breast loosely with aluminum foil. Roast in the preheated oven for 1 hour and 20 minutes.
  • 5. Reserve remaining butter mixture, melt for basting.
  • 6. Baste turkey breast occasionally with remaining butter mixture.
  • 7. Let turkey breast rest 10 to 15 minutes.
  • 8. Slice and serve with gravy.
  • 9. FOR GRAVY
  • 10. Heat 3 Tbsp. pan drippings in a small sauce pan. Add flour and mix to make a roux.
  • 11. Add Chicken or turkey stock, and half & half, whisk until thickened. Salt & pepper to taste.

1 (2-1/2 lb.) boneless turkey breast with skin
3 Tbsp softened butter
1/2 tsp garlic powder
1 tsp paprika
1/2 tsp mrs dash (table blend)
salt & pepper to taste
1 c chicken or turkey stock
3 Tbsp reserved pan drippings for gravy.
3 Tbsp flour
2 Tbsp half & half

This wild turkey breast is so tender and flavorful and certainly easy to prepare. The brining helps make it really tender.

Steps:

  • 1. In a gallon zip-lock bag, add salt, sugar, peppercorns, garlic, thyme and bay leaf. Add turkey breast and enough water to cover. Zip bag closed and shake 3 - 4 times to mix. Place in refrigerator and brine overnight. Next a.m., remove turkey from brine, rinse turkey well. Discard brine. Sprinkle turkey with mesquite seasoning and place in crockpot. Cover turkey with Italian dressing. Cook on low about 5-6 hours or until tender. Remove turkey from crockpot and cool. Slice turkey.

1/2 - 1 bottle zesty italian dressing
mccormick mesquite grill mates seasoning
1 Tbsp peppercorns
3-4 garlic cloves
1 tsp dried thyme

  • Mix the dressing and wine.
  • Pour into a 1 gallon size zip-lock bag.
  • Add the turkey breast and marinate overnight, turning at least once.
  • Drain off the marinade & discard.
  • Sprinkle turkey breast with the seasonings.
  • Place in oven roasting bag.
  • Melt the butter in the olive oil and add to the turkey breast.
  • Place the roasting bag & turkey breast in a 9"x5" loaf pan.
  • Bake at 350 degrees for 1 1/2 hours.

  • Prepare rice according to package directions; place in a large bowl. Dissolve bouillon in hot water; add to rice.   • First, you have to carefully separate the skin from the body without tearing the skin. If you do poke through the skin once or twice, you’re still fine. Start at the neck and put a hand inside, working towards the top of the breast. Feel where the skin connects to the breast and begin working your fingers in between, separating skin from breast. Continue working your hands down the breast towards the back of the bird. Season the turkey inside and out with salt and pepper.
  • Combine 1/2 teaspoon salt and 1/4 teaspoon pepper with the bacon, lemon, onion, garlic and herbs. Spread mixture in the area you’ve created between the skin and the breast.
  • Place turkey, breast side down, in a roasting pan. Arrange carrots, celery, potato and onion under each side of the breast to keep it from falling over. If it still won’t stay up, it’s no big deal. Just flip it over to the other side after about 45 minutes of cooking time.
