EMPANADA PIE

Serve this empanada pie with a salad, hard-boiled eggs, salsa or sour cream, and shredded Mexican cheese (optional).

Steps:

  • Place onion in a food processor and process to a medium chop. Use a garlic press to add garlic to the chopped onion.
  • Preheat a saute pan over medium-high heat. Add oil, onion, and garlic to the hot pan. Reduce heat to medium and saute until golden, about 5 minutes.
  • Place mushrooms in the food processor and process to a medium dice. Stir into the onion mixture and cook for 3 to 4 minutes. Meanwhile, process olives to a fine mince and set aside.
  • Add oregano, paprika, cumin, red pepper flakes, and pepper to the pan; cook and stir until fragrant, 1 to 2 minutes. Crumble in ground beef and cook, breaking up with a spoon or spatula, until thoroughly browned, 5 to 8 minutes. Stir in olives. Remove from heat and cool for 20 to 30 minutes, stirring occasionally.
  • Preheat the oven to 425 degrees F (220 degrees C). Spray a 9-inch pie plate with cooking spray. Line the plate with 1 pie crust.
  • Carefully spoon the cooled beef mixture into the crust. Press the second crust on top. Slice air vents in the top crust.
  • Beat egg and water together in a small bowl. Brush egg wash thoroughly over the complete surface of the pie.
  • Bake in the preheated oven until crust is golden brown, 45 to 50 minutes. Let cool for 5 to 10 minutes before cutting and serving.

Steps:

  • Preheat the oven to 350 degrees F.
  • Make a flour well. In the center add shortening, sugar, salt and water. With hands, mix all ingredients together, kneading until the texture resembles soft but not sticky dough. Lightly grease sheet pan and divide dough into 6 even balls. Flour a working surface and rolling pin. Roll out each ball into an oval shape and pour 2 tablespoons of your favorite fruit pie filling on half of the oval shape. Fold and seal the sides with a fork.
  • Lightly brush egg on topside of empanada. Place empanadas on lightly greased pan. Place in oven and bake for 15 to 18 minutes or until golden light color. Cool slightly on rack before serving.

Steps:

  • Sift flour with salt into a large bowl and blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal with some (roughly pea-size) butter lumps.
  • Beat together egg, water, and vinegar in a small bowl with a fork. Add to flour mixture, stirring with fork until just incorporated. (Mixture will look shaggy.)
  • Turn out mixture onto a lightly floured surface and gather together, then knead gently with heel of your hand once or twice, just enough to bring dough together. Form dough into a flat rectangle and chill, wrapped in plastic wrap, at least 1 hour.

  • Lay an empanada dough round in front of you. Scoop straight down into the Shepherd's Pie, getting about 2 tablespoons combined of the mashed potatoes and meat/vegetables in gravy. Scoop it into the center of the dough round. Dip your finger into a cup of water and moisten the dough around the perimeter of the circle. Bring the edges of the dough up to meet together around the filling and squeeze firmly. Lay on the work surface and use a fork to crimp the edges firmly. Transfer to a plate. Repeat with the remaining dough rounds and Shepherd's Pie.
  • Heat 2 to 3 inches of your chosen oil to 350°F in a deep fryer or a high-sided, heavy-bottomed pan on a burner. When the oil reaches the correct temperature, ease a couple of the empanadas into the oil gently, taking care not to crowd the pan as they need to be able to move around and expand in the hot oil. Fry the empanadas for 3 to 5 minutes, or until golden brown and bubbly on the surface. Use tongs or a slotted spoon to transfer the finished Shepherd's Pie Empanadas to a paper towel lined plate to rest for at least 3 minutes before serving. Repeat the frying process with the remaining Shepherd's Pie Emanadas.
  • Preheat your oven to 400°F. Lightly brush a rimmed baking sheet with your chosen oil. Arrange the empanadas with 2 inches of space between them on all sides, brush the empanadas lightly with oil, then bake for 20 to 30 minutes, or until the dough is lightly golden brown on the edges and firm to the touch. Remove the pan from the oven and let rest for 5 minutes before serving.
  • Preheat oven to 350°F. Arrange the previously cooked empanadas on a rimmed baking sheet and bake for 10 to 15 minutes, or until heated through.
