Balsamic- and Dijon-Glazed Ham with Roasted Pearl Onions image

Steps:

  • Cook onions in large pot of boiling salted water 2 minutes; drain. Trim root ends, leaving base intact. Peel. (Can be made 1 day ahead. Cover and refrigerate.)
  • Preheat oven to 325°F. Combine sugar, vinegar, and mustard in bowl for glaze. Transfer onions to 11x7x2-inch glass baking dish. Add 2/3 cup glaze, butter, 1 teaspoon salt, 1/4 teaspoon pepper, and 1/2 cup water; toss to coat. Cover with foil.
  • Line large roasting pan with foil. Making 1/2-inch-deep slits, score ham with diamond pattern. Place ham in pan and roast 45 minutes. Place onions in oven. Roast ham and onions 25 minutes. Uncover onions. Continue roasting onions and ham 50 minutes.
  • Baste ham with some of glaze. Continue to roast ham and onions until deep brown and glazed, brushing ham with glaze every 10 minutes, about 30 minutes longer. Transfer ham to large platter. Transfer onion mixture to bowl. Serve ham, passing onion mixture separately.

2 pounds pearl onions
1 cup (packed) dark brown sugar
5 tablespoons balsamic vinegar
3 tablespoons Dijon mustard
1/4 cup (1/2 stick) butter, diced
1 teaspoon salt
1/4 teaspoon ground black pepper
1 8- to 10-pound half ham shank, fully cooked, fat trimmed to 1/2-inch thickness

Sweet-on-sweet glazes were more popular in the past, but this updated-yet-accessible version strikes an ideal balance between sweet and acidic, the perfect complements to naturally salty ham. The hardest part about this six-ingredient recipe? Waiting to carve yourself a succulent slice-after all, a good host lets their guests go first.

Baked Ham with Balsamic Brown Sugar Glaze image

Steps:

  • Heat oven to 325°F. Place ham, fat side up, on rack in shallow roasting pan. Insert meat thermometer so tip is in thickest part of ham and does not touch bone or rest in fat. Cover loosely and bake 1 hour 15 minutes to 2 hours 15 minutes or until thermometer reads 135°F (13 to 17 minutes per pound).
  • About 20 minutes before ham is done, remove from oven. Pour drippings from pan. Remove any skin from ham. Mix brown sugar, vinegar and mustard; pat or brush on ham. Bake uncovered 20 minutes longer.
  • Cover ham loosely and let stand about 10 minutes or until thermometer reads 140°F. Garnish with orange slices and cherries.

Steps:

  • Remove the ham from the refrigerator 1 to 2 hours before it needs to go in the oven. This will allow the meat to come a bit closer to room temperature before it goes into the oven.
  • Place the ham on a large cutting board and score the ham with cuts, 1/2 inch deep in a diamond pattern. If that sounds confusing, look down at the ham and start in a straight line from one end to the other making a half inch deep cut all the way across and over the top of the ham. Then repeat this cust, about an inch apart, slicing the ham from one side to the other. Then turn the ham 180 degrees and repeat, straight cuts, ll the way across the ham. It should resemble a checkerboard when you are finished. This process allows the glaze to penetrate deeper into the ham. Is is well-wort the effort and it only takes a few minutes.
  • Preheat oven to 325. Line a large roasting pan or a heavy rimmed baking sheet with foil and place the ham cut side down in the pan. (I skipped the foil and put into my big turkey pan) Roast 45 to 50 minutes. While the ham begins roasting, combine the sugar, vinegar, and mustard in a small cup or bowl (I skipped the sugar when I made it). Set aside next to the stove.
  • Remove the ham from the oven and baste it, 10 minutes more, baste again, 10 minutes more, baste it generously with all remaining glaze one last time and finish roasting it for 5 more minutes. An average of 10 minutes cooking time per pound of ham should be just right.
  • Transfer the ham to a large platter and let rest 10 to 15 minutes before slicing.
