- BANANA CAKE: Preheat your oven to 350 degrees F. Grease two 8- or 9- inch layer cake pans (or line the pans with parchment paper or wax paper). Whip together the butter and sugar. Add the buttermilk. Add the bananas and eggs - whip just enough to mix together. Add the flour, baking powder, soda, and salt. Mix together just well enough to incorporate the ingredients - do not over mix. Pour into the prepared pans. Bake at 350 degrees for 25 - 35 minutes or until a toothpick inserted near the center comes out almost clean. Cool completely before frosting. FLUFFY FROSTING: Put the milk and flour in a small saucepan and cook over medium-low heat until thick, stirring constantly. (Stirring is important, and is key to making sure all lumps are out and the mixture is smooth.) Cool this mixture to room temperature. In a large mixing bowl, put the butter, butter-flavored Crisco, sugar and vanilla. Whip together well, until light and fluffy. Add the cooled flour mixture to the butter/sugar mixture and whip together well.

- Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. Add bananas and milk; mix just until combined. Combine flour, baking powder, baking soda and salt. Add to creamed mixture just until blended., In another bowl, beat egg whites until soft peaks form. Fold into batter. Pour into a greased 13x9-in. baking pan. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool completely on a wire rack., In a large bowl, beat cream cheese and butter until fluffy. Add the confectioners' sugar, vanilla and salt; beat until smooth. Spread over cake. Store in the refrigerator. If desired, serve with sliced bananas.

- In a large bowl, mix together butter or margarine, sugar, eggs and vanilla. Set aside.
- In another bowl, sift together flour, salt, soda, and baking powder. Add these dry ingredients to the creamed mixture. Add sour milk and bananas to the batter. Beat together well.
- Line two 9 inch round cake pans, or one 9 x 13 inch pan with wax paper; the pans can be greased and floured instead, if desired. Bake at 350 degrees F (175 degrees C) for 17 to 20 minutes for the layered cakes, or for 25 to 40 minutes for the sheet cake.

- In a stand mixer fitted with the paddle attachment, beat together butter, sugar, and oil on medium speed for 3-4 minutes until fluffy. Scrape down the sides and the bottom of the bowl occasionally. Beat in the eggs one at a time, beating well after each addition. Add mashed bananas, buttermilk, and vanilla extract and beat until combined. With the mixer on low speed, add half of the dry ingredients and beat just until combined, then add the rest of the dry ingredients and beat just until combined. Do not overmix, the less you mix, the lighter the cake will be.
- Pour batter into prepared pan and bake for 35-45 minutes until a toothpick inserted into the center of the cake comes out clean. Allow to cool to room temperature. Frost cake with cream cheese frosting.

- Using a handheld or stand mixer fitted with a paddle attachment, beat the butter on high speed until smooth and creamy – about 1 minute. Add both sugars and beat on high speed for 2 minutes until creamed together. Scrape down the sides and up the bottom of the bowl with a rubber spatula as needed. Add the eggs and the vanilla. Beat on medium-high speed until combined, then beat in the mashed bananas. Scrape down the sides and up the bottom of the bowl as needed. With the mixer on low speed, add the dry ingredients in three additions alternating with the buttermilk and mixing each addition just until incorporated. Do not overmix. The batter will be slightly thick and a few lumps is OK.
