BANANA JUMBO COOKIES
This is a cookie that my family has been making for a long time. It is incredibly moist and chewy cookie. We sometimes top it with a frosting but it tastes just as great alone.

Steps:
- Preheat oven to 375 degrees.
- Mix shortening, sugar,and eggs well.
- Stir in bananas, buttermilk, and vanilla extract.
- Blend flour and baking soda. Stir into other ingredients.
- Blend in nuts.(Optional).
- Chill 1 hour. The dough will still be slightly sticky even after chilling.
- For jumbo cookies, drop rounded tablespoonfuls onto lightly greased baking sheet. For smaller cookies use a teaspoon.
- Bake at 375 for about 7-10 minutes or until light golden brown.
- Leave unfrosted or frost with favorite flavored frosting.

EASY KIDS' RECIPE FOR FLUFFY BANANA COOKIES
I should rename these to the Houdini cookies, with how fast they vanish from my kitchen. Very fluffy and delicious. My daughter just turned one and loves to help make these. She pulls the paper from the butter, peels the bananas, mashes and mixes. It's so fast and easy. Any time we have a couple bananas going brown we mix up these. The recipe originated as my grandmother's banana bread, but one day I was in a rush and didn't want to wait an hour for the bread to bake so I tossed them in as cookies and we all agreed it came out better this way.

- Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
- Place bananas, flour, 1/2 cup sugar, butter, walnuts, egg, baking soda, and salt in a bowl. Mix until well combined. Drop 3 tablespoonfuls of dough 2 to 3 inches apart onto baking sheet. Sprinkle 1 tablespoon sugar on top.
- Bake in the preheated oven until golden brown and edges are set, 15 to 20 minutes.

Here's a treat for the vegans in your life. Adapted from the cookbook "Vegan Cookies Invade Your Cookie Jar," by Isa Chandra Moskowitz and Terry Hope Romero, these cookies, which are chunky with chocolate chips, walnuts and rolled oats, are best when they are completely cooled, so their exteriors can crisp up. They do not taste strongly of banana - it's just a hint.

- Preheat oven to 350 degrees. Lightly spray two baking sheets with oil. In a mixing bowl, mash banana well. Add oil, sugar and vanilla, and mix with a strong fork. Add flour, baking soda, salt and cinnamon, and mix until just moistened.
- Add oatmeal, walnuts and chocolate chips. Using your hands or a sturdy spoon, mix well, making sure oats are well moistened. (If dough is very slippery, add one or two extra tablespoons flour.)
- Using clean, wet hands, re-wetting as needed, roll dough into balls slightly smaller than a golf ball, about 1 1/3 inches in diameter. Flatten slightly and place 2 inches apart on a baking sheet. Bake until lightly browned, 10 to 12 minutes. Remove from heat and allow to cool for 2 minutes, then transfer to a rack to cool completely. Store in an airtight container.

- Heat oven to 375°F. Mash 2 of the bananas to measure 1 cup mashed; reserve remaining 1/2 banana. In large bowl, beat sugar, butter, vanilla, eggs and mashed bananas with electric mixer on medium speed, or mix with spoon, until well blended. Stir in flour, baking powder and salt. Stir in chocolate chips and 1/2 cup walnuts.
- Drop dough by 1/4 cupfuls about 2 inches apart onto ungreased large cookie sheet.
- Bake 11 to 15 minutes or until set and edges begin to turn light golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
- Mash enough of remaining 1/2 banana to measure 2 tablespoons mashed. In medium bowl, stir frosting and mashed banana until smooth and spreadable. Spread each cookie with about 1 tablespoon frosting. Sprinkle 1/4 cup walnuts over frosted cookies.

- Mix together shortening, 1/2 cup butter, white sugar, eggs, bananas, vanilla, 1/2 cup evaporated milk and vinegar till light and creamy.
- In a separate bowl mix together flour, baking soda, and salt. Add to other mixture. Add nuts.
- Chill one hour in refrigerator.
- Drop by teaspoonful on greased cookie sheet about two inches apart. Bake at 375 degrees F (190 degrees C) for about 15 minutes. Let cool then frost them.
- To Make Frosting: Mix 2 1/2 cups confectioners' sugar with 2 tablespoons soft butter or margarine, 1/4 cup evaporated milk, and 1/4 tsp vanilla. Beat until soft. Spread on tops of cooled cookies.
