SIMPLE BANANA COFFEE CAKE
This is a no-frills cake that tastes great with morning beverages or as a snack. It's good for using up those overripe bananas that you hate to throw away.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking dish.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy; beat in eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Stir bananas into butter mixture.
- Sift flour, baking soda, and salt together in another bowl. Stir flour mixture into banana mixture until batter is evenly blended. Pour batter into prepared baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

~ BANANA NUT COFFEE CAKE ~
I made this cake in honor of National Coffee Month. Coffee is something I always have in hand, it matters not what time of day. I'm immune to the stuff. This cake went perfectly with my morning coffee. I hope you try it sometime. It's too yummy not to! Yum!

- 1. Preheat oven to 350 degree F. Spray and flour a 10 inch bundt cake pan, ( I use bakers joy. ) Combine flour, salt, baking powder, baking soda in a small bowl Set aside. Make nut crumble: Mix together brown sugar, cinnamon and nutmeg, with a pastry blender cut in the butter until crumbly. Stir in nuts. Set aside. 2 In a large bowl, beat butter and sugar until fluffy. Beat ion the eggs and vanilla. Alternate adding the flour mixture with the pureed bananas, ending with flour. Stir in raisins if using.
- 2. Spread half the batter into the prepared pan and top with half of the nut mixture, as evenly as you can.
- 3. Spread remaining batter and evenly crumble remaining nut mixture.
- 4. Bake for 45 - 50 minutes or until pick comes out clean.
- 5. Cool on rack for 10 minutes, then remove from pan and continue cooling on rack.
- 6. I made a cinnamon drizzle using about 3/4 cup confectioners sugar, a few sprinkles of cinnamon and heavy cream until was my preferred consistency. Drizzle over cooled cake if preferred.

- In a large bowl, combine the contents of the roll mix and yeast packets with the sugar. Stir in water, butter, egg and maple flavoring; mix well., Turn onto a floured surface; knead until smooth and elastic, 2-3 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, 45-60 minutes., In a small bowl, combine sugar, walnuts, cinnamon and maple flavoring. Grease a 12-in. pizza pan. Punch dough down. Turn onto a lightly floured surface; divide into 3 portions. Roll each into a 12-in. circle. Place 1 circle on prepared pan. Brush with a third of the melted butter; sprinkle with a third of the filling. Repeat layers twice. Pinch around edge to seal., Place a small glass in center of circle. With kitchen scissors, cut from outside edge just to the glass, forming 16 wedges. Twist each wedge 5 or 6 times and tuck ends under. Remove glass. Cover with a kitchen towel; let rise in a warm place until doubled, 30-45 minutes., Preheat oven to 375°. Bake until golden brown, 20-25 minutes. Remove from pan to a wire rack to cool. Combine glaze ingredients; drizzle over warm coffee cake.

- Preheat the oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Combine blueberries, bananas, eggs, flax seed, and wheat germ in a large bowl; mix by hand with a wire whisk until combined. Add flour, oats, milk, sugar, oil, vanilla extract, baking powder, baking soda, and salt; gently mix by hand for 2 minutes until thoroughly combined.
- Combine brown sugar, pecans, flour, and cinnamon for the topping in a medium bowl; mix with a fork until combined. Add melted butter; stir well.
- Pour 2/3 of the cake batter into the prepared pan and sprinkle with 1/2 of the topping. Gently ladle the rest of the cake batter over top, and sprinkle with remaining topping.

- To make the topping mix all ingredients together using your fingers or a wooden spoon, mix in the nuts.
- Preheat oven to 350*F. Brush an 8X8 inch square pan or a 9X2 inch round pan with melted butter and dust lightly with flour, or spray generously with cooking spray.
- Beat the butter, sugar and maple syrup with an electric mixer. Add the eggs all at once. Scrape the sides and bottom of bowl. Mix in the bananas.
- Sift together the flour, baking soda and salt; add to the banana mixture, blending well. Stir in the walnuts. Spread into prepared pan. Drop the topping in small dollops onto the banana batter. MAPLE-NUT COFFEE TWIST
This recipe is from Pillsbury Family Kitchens Cookbook. This is really delicous and makes a nice presentation. The dough is really easy to work with. I did need to add a couple more Tbsps of flour to the dough. This calls for a 12-inch pizza pan, but I'm sure a large cookie sheet would work just fine. :)

- In a small saucepan, heat milk and margarine until very warm (120*-130*F).
- In large bowl, blend warm liquid, 1 cup flour, sugar, salt, yeast, extract and egg at low speed until moistened.
- Beat 2 minutes at medium speed.
- By hand, stir in remaining flour to form a soft dough.
- Knead on floured surface until smooth and elastic, about 2 minutes.
- Place dough in greased bowl; turn greased-side-up.
- Cover; let rise in warm place until light and doubled in size, 45 to 60 minutes.
- In small bowl, combine filling ingredients, set aside.
- Grease (not oil) 12-inch pizza pan.
- Punch down dough; divide and shape into 3 balls.
- On floured surface, roll or press 1 ball of dough to cover bottom of prepared pizza pan.
- Place in prepared pizza pan.
- Brush dough with about 1/3 of melted margarine; sprinkle with 1/3 Filling.
- Repeat layer of dough, melted margarine and Filling.
- To shape place a glass about 2 inches in diameter in center of dough, (a shot glass works perfectly)
- With pizza cutter, cut from outside edge to the glass, forming 16 pie-shaped wedges.
- Twist each wedge 5 times. Remove glass.
- Cover; let rise until light and doubled in size, 30 to 45 minutes.
- Heat oven to 375*F.
- Bake 18 to 22 minutes or until golden brown.
- Cool 5 minutes; remove from pan.
- In small bowl, blend Glaze ingredients until smooth. Drizzle over warm coffee cake.

- Add 1/2 cup (8 tablespoons) of unsalted butter to a small frying pan. Cook over low heat, stirring until it browns. It will foam up, then turn brown. Keep stirring the entire time. Once it turns brown the foam will diminish and the butter will become golden. Remove from heat. You are using this butter for both the cake and streusel.
