Prosciutto-Wrapped Fruit image

Steps:

  • Spread cheese evenly on prosciutto slices. Place pear or apple wedge on shortest side of each slice; roll up.
  • Serve immediately, or cover loosely and refrigerate until serving time. To serve, cut each roll into 3 pieces. Secure each with cocktail toothpick.

Prosciutto-Wrapped Pineapple Bites image

Steps:

  • 1. Position rack in upper third of oven; preheat to 375°F. Line a large baking sheet with parchment paper.
  • 2. Cut off the top and bottom of the pineapple and remove the skin with a sharp knife. Cut the pineapple in quarters lengthwise through the core. Cut out the core. (Reserve half the pineapple for another use.) Cut 2 of the pieces in half again lengthwise, then cut those 4 pieces crosswise into 6 equal pieces to make 24 chunks. Cut each slice of prosciutto lengthwise into 3 strips. Cut each strip in half crosswise to make 24 pieces total. Wrap a piece of prosciutto around each chunk of pineapple. Place on the prepared baking sheet.
  • 3. Bake on the upper rack until the prosciutto is sizzling and browned in spots, 15 to 20 minutes.
  • 4. Meanwhile, whisk pineapple juice, ketchup, vinegar, cornstarch and garlic powder in a small bowl. Heat oil in a small saucepan over medium heat. Add jalapeño and cook, stirring, for 1 minute. Add the juice mixture; bring to a simmer. Cook until glossy and thickened, 1 to 2 minutes. Serve the pineapple bites on toothpicks with the dipping sauce.

Grape and Prosciutto Appetizer image

Steps:

  • Preheat oven to 350 degrees F. Lightly brush 12 slices of baguette with half of the olive oil and lay them directly on the middle rack of the oven. Toast for 5 minutes, or until light golden brown. Put the remaining olive oil in a small saute pan and warm over medium-high. Add the grapes and saute for 2 to 3 minutes or until soft and warmed through. Remove from the heat. Sprinkle the balsamic vinegar over the grapes and add a few grindings of pepper.
  • Top each baguette slice with one leaf of basil and spread the goat cheese evenly among the toasted slices. Cut each slice of prosciutto in half and drape over the cheese. Top each of the baguettes with three of the sauteed grapes.
  • May be served warm or made in advance and served at room temperature.

1 Baguette, Cut into 1/4-inch Slices

36 Green, Red, and/or Black Grapes

1 Bunch of Fresh Basil

Prosciutto with Fresh Fruit image

Steps:

  • Cut the fruit into the desired size. Squeeze the halved citrus over all the fruit. Crack freshly ground pepper over it, if desired. Place a piece on each plate and lay the prosciutto over each piece of fruit, cutting to size if necessary. Serve a wedge of citrus on the side.

  • Prepare the cantaloupe and cut it into wedges. I find it easier to peel the cantaloupe, once you cut it. So, first, cut the cantaloupe in half. Using a spoon, remove the seeds. Then cut each half into wedges and peel them.
  • Wrap the prosciutto around the cantaloupe wedges and arrange them on a serving platter (left some wedges without prosciutto, since I had more cantaloupe to use up).
  • Drizzle a little bit of balsamic glaze or quality honey (or both, if you like) If using, arrange a few basil leaves on the platter. I loved the addition of fresh basil leaves for a pop of color and freshness, but this is totally optional.
