Banana Oat Muffins image

Steps:

  • Combine flour, oats, sugar, baking powder, soda, and salt.
  • In a large bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana, and combine thoroughly. Stir the flour mixture into the banana mixture until just combined. Line a 12-cup muffin tin with paper bake cups, and divide the batter among them.
  • Bake at 400 degrees F (205 degrees C) for 18 to 20 minutes.

Steps:

  • Preheat oven to 400°F.
  • Mix Bananas, milk, egg, and applesauce with a food processor or immersion blender.
  • Add to dry ingredients, and mix until just blended.
  • Spoon into mini muffin cups about half full.
  • Bake 15 minutes, cool remove from pan. Makes approx 11 mini muffins.

Banana & Apple Oatmeal Muffins image

Steps:

  • In a mixing bowl, cream butter and sugar.
  • Add eggs, bananas, apple and honey; mix well.
  • Combine dry ingredients; stir into creamed mixture just until moistened.
  • Fill paper-lined muffin cups two-thirds full.
  • Bake at 350 degrees F for 15-18 minutes or until muffins test done.
  • Cool in pan 10 minutes before removing to a wire rack.
