Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
  • Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
  • Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

Steps:

  • Puree bananas in blender (1 cup). In medium bowl, combine bananas, egg, sugar and butter and mix until well blended. Stir in berries and vanilla. In large bowl, combine flour, baking powder, cinnamon and salt. Stir banana mixture into flour mixture until evenly moistened. Spoon batter into well greased muffin cups. Bake 350 for 25-30 minutes.

2 extra ripe medium bananas

1/2 cup melted margarine

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 6 muffin cups with cooking spray.
  • Combine sugar and butter in a medium bowl; beat with an electric mixer until pale and fluffy. Add bananas, egg, and vanilla extract; beat for 1 minute.
