- Place all the ingredients into a large pot, bring to the boil and simmer for 1 1/2 hours.
- Remove the hock from the soup and remove the meat from the bone, chop into small pieces and put back into soup.
- Serve.

- In a large saucepan, saute onion and celery in oil and butter until tender. Add broth; bring to a boil. Add peas; return to a boil. Reduce heat; cover and simmer for 1 hour or until peas are tender. , Stir in lemon juice, cumin and pepper; simmer for 5 minutes. In small batches, puree soup in a blender; return to the pan. Heat for 4-5 minutes. Garnish with parsley and pistachios.

- Chop vegetables. Celery and carrots should be diced, leeks cut in circles and thoroughly cleaned. Also, make sure to sort through the split peas in case there are any small rocks in there.
