MOIST PINEAPPLE BANANA BREAD
Our four kids like slices of this moist tropical-tasting banana bread for breakfast. I sometimes bake it in mini loaf pans, then freeze the loaves so we can enjoy a small portion at a time. -Mary Watkins, Chaska, Minnesota

- In a large bowl, combine the flour, sugar, salt, baking soda and cinnamon. In another bowl, whisk the eggs, oil and vanilla; add pineapple and bananas. Stir into the dry ingredients just until moistened. Pour into two greased 8x4-in. loaf pans., Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in bananas, eggnog and vanilla. In another bowl, whisk flour, baking powder, 1/4 teaspoon nutmeg, salt and baking soda; gradually beat into banana mixture., Transfer to a greased 9x5-in. loaf pan; sprinkle with remaining nutmeg. Bake 50-60 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes before removing to a wire rack to cool.

COOKED EGGNOG
I got this recipe from my favorite literature teacher many, many moons ago, even before the concerns about raw egg yolks. There were so few people in the class, just enough to keep from being cancelled, that we'd usually meet at her home and drink tea and someone would bring cookies. During the holidays she made this for us. I've made eggnog from this recipe for years, especially since we shouldn't use raw eggs.

- In a large saucepan, mix the eggs, sugar, and salt, if used.
- Stir in 2 cups milk.
- Cook, stirring constantly, until thickened and mixture coats a metal spoon (will read 160°F on a candy thermometer).
- Remove from heat and add 2 cups milk and extract.
- Chill several hours or overnight.
- Whirl in blender before serving.
- Add rum or brandy as desired, top with whipped cream and ground nutmeg.

- Heat oven to 180C (350F).
- Grease and line two 9" (23 cm) round cake pans and dust the sides with rice flour.
- Whisk egg replacer powder and pineapple juice together until fluffy.
- Add silken tofu and whisk until smooth.
- Add oil and whisk again. Set aside.
- Mix together mashed bananas, crushed pineapple and caster sugar.
- Sift together brown rice flour (or white rice flour), potato starch, xanthan gum, baking powder and cinnamon.
- Add to banana, pineapple and sugar and mix together.
- Add egg replacer, juice and oil mixture. Mix well.
- Pour evenly into two prepared pans. Bake for 35 minutes or until a skewer comes out clean.
- Leave in to cool in tin for 10 minutes before turning out onto a wire rack to cool completely.
- Icing : Beat together cream cheese, soy milk powder and icing sugar until light and fluffly. Spread 1/3 of icing on first cake. Arrange the mango slices (or paw paw or pineapple) over the icing. Place 2nd cake on top. Ice the top with remaining icing. Decorate with pieces of glace pineapple (or mango slices and/or banana slices), if desired.

- In a large heavy saucepan, combine 1-1/2 cups milk, 1-1/2 cups cream, egg yolks and sugar. - 2. Slice 2 bananas and arrange evenly on top of wafers. Sprinkle with 1/4 teaspoon nutmeg; set aside.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch pan.
- Mix flour, baking soda, and salt together in a large bowl. Beat margarine and white sugar together in a separate bowl until light and fluffy. Beat in eggs, one at a time, until fully incorporated; stir in 2 teaspoons vanilla extract. Stir butter mixture into flour mixture, alternating with eggnog, until well combined. Fold in bananas.
