MOIST PINEAPPLE BANANA BREAD
Our four kids like slices of this moist tropical-tasting banana bread for breakfast. I sometimes bake it in mini loaf pans, then freeze the loaves so we can enjoy a small portion at a time. -Mary Watkins, Chaska, Minnesota

Steps:
- In a large bowl, combine the flour, sugar, salt, baking soda and cinnamon. In another bowl, whisk the eggs, oil and vanilla; add pineapple and bananas. Stir into the dry ingredients just until moistened. Pour into two greased 8x4-in. loaf pans., Bake at 350° for 60-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

This is my mom's recipe for banana bread with canned pineapple. It comes out nice and moist, but not overly oily as some banana breads do.

- Preheat the oven to 325 degrees F (165 degrees C). Grease and flour 2 loaf pans.
- Mix flour, sugar, bananas, oil, applesauce, pineapple, eggs, cinnamon, baking soda, and salt together in a large bowl until blended. Pour into the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 50 to 60 minutes.

Steps:
- Freeze can of pineapple for 4 hours or overnight.
- Remove can from freezer. Rinse can under warm, running water for 2 minute.
- Remove both ends of can, push frozen pineapple onto cutting board. Slice into chunks, transfer to blender.
- Add fruit juice, yogurt, banana (peeled and cut into chunks) and ginger.
- Blend until thick and smooth. Pour into glasses. Garnish with pineapple wedges and mint.
- For a pina colada passion, omit the banana and ginger. Replace the yogurt with 1 pint coconut sorbet, lime juice.

ROASTED SPICY PINEAPPLE WITH PASSION FRUIT GLAZE
Steps:
- Preheat an oven to 350 degrees. In a small saucepan, mix together the sugar, water and vanilla bean and cook until golden brown. Add the rum, ginger, chiles, banana, passion fruit and mix well. Allow to cool then blend in a food processor. Strain and set aside. Place pineapple in a shallow baking dish and brush on glaze. Bake for 1 1/2 hours, basting every 15 to 20 minutes. - Combine graham cracker crumbs and melted margarine, and pat into bottom of 9x13-inch pan.
- In medium, non-stick saucepan over medium heat, combine remaining margarine, confectioners' sugar, eggs, corn starch and vanilla. Bring to a boil, stirring frequently. Continue stirring, reduce heat and simmer 8 to 10 minutes. Let cool, then spread over crust.
- Peel and slice bananas, dipping each piece in lemon juice to prevent browning, and layer over custard mixture. Layer pineapple on top of bananas. Cover all with whipped topping. Keep refrigerated until serving.

- Preheat oven to 180°C. Lightly spray a 21.5cm x 11cm (base measurement) loaf tin with oil. Line the base and sides with baking paper, allowing the long sides to overhang. Sift the flour, bicarbonate of soda and cinnamon into a large bowl. Add ⅓ cup (75g) of the brown sugar and stir to combine.
- Combine the banana, pineapple, reserved pineapple juice, passionfruit, eggs and oil in a medium bowl. Stir the banana mixture into the flour mixture.
- Spread the mixture into the prepared tin. Bake for 35 minutes. Combine the remaining brown sugar with the spread, coconut and milk in a saucepan. Stir over low heat until the spread has melted. Carefully spread the coconut mixture over the top of the loaf. Bake for a further 20-25 minutes or until a skewer inserted in centre of loaf comes out clean. Cover the top of the loaf loosely with foil if coconut is overbrowning. Stand the loaf in the tin for 5 minutes before lifting out onto a wire rack to cool completely.
