We usually recommend preparing the beans at home, but using canned chickpeas allows for a fast, convenient dish.

Steps:
- Heat oil in a large frying pan over medium heat, and fry onions until tender.
- Stir in garlic, ginger, cloves, cinnamon, cumin, coriander, salt, cayenne, and turmeric. Cook for 1 minute over medium heat, stirring constantly. Mix in garbanzo beans and their liquid. Continue to cook and stir until all ingredients are well blended and heated through. Remove from heat. Stir in cilantro just before serving, reserving 1 tablespoon for garnish.

BASIL & LEMON CHICKPEAS WITH MACKEREL

- Heat 2 tbsp oil in a large, shallow pan. Add the spring onions, garlic and lemon zest, then cook for 2 mins until the onions are tender but still very green. Add the chickpeas, then stir until well coated in the onion mixture. Lightly crush with a potato masher, then add the stock and tomatoes. Simmer for 3-4 mins or until the liquid is absorbed, then set aside to cool slightly.
- Meanwhile, heat the remaining oil in a large, non-stick frying pan over a medium heat. Season the mackerel fillets on both sides and fry for 3 mins each side, starting on the skin side. You'll probably need to cook these in two batches.
- Add the basil and a squeeze of lemon juice to the chickpeas, then season to taste. To serve, spoon the warm chickpeas onto serving plates, drizzle with a little extra olive oil and top with the mackerel fillets.

CHICKPEA CURRY
My sister got this recipe in Chiang Mai, Thailand when she was staying with some locals during her travels. It's one of my favorites. Thai basil tastes best in the recipe but fresh sweet basil is good too. And if you like your curry hot, use 1 TBSP of curry paste.

- Heat oil in large saute pan on medium heat.
- Add curry, onion, garlic and briefly saute.
- Add coconut milk and soy and bring to boil.
- Boil for 5 minutes, stirring occasionally.

- Bring back to simmer.
- Serve with jasmine rice.

EASY CHICKPEA CURRY
This is my personal curry recipe that I've ended up developing over the years. It's very versatile - feel free to add any veggies or meats. All the ingredients can be adjusted to fit your preference. Serve over rice or just eat with naan.

- Melt the butter over medium heat in a large saucepan. Cook and stir the onion and garlic in the melted butter for about 5 minutes, until onion is translucent. Sprinkle in curry powder, garam masala, paprika, sugar, ginger, turmeric, salt, and pepper. Continue to cook and stir 3 to 4 more minutes, until spices are lightly toasted.
- Mix in the garbanzo beans, potatoes, coconut milk, tomato, milk, ketchup, sour cream, and bouillon cubes. Simmer the curry over medium-low heat for about 25 minutes, until the potatoes are tender. Stir in ground almonds to thicken.

- Add the coconut oil to a large skillet or pot and warm on medium heat. When the oil starts to simmer add the onions and 1/2 tsp salt and sauté until softened, about 5 minutes.
- Add the garlic and ginger to the onions and continue to cook another minute stirring the whole time. Stir in the tomato paste, curry powder, garam masala, cumin and basil. Mix well for another minute until the spices are fragrant.
- Add the crushed tomatoes, coconut milk and chickpeas to the pan. Mix until fully combined. Let the mixture come to a boil and then reduce the heat down so that it maintains a gentle simmer. Let cook for 15-20 minutes, stirring occasionally until the stew reduces down and thickens into a saucy, gravy.
- In the final few minutes of cooking, add the spinach and mix in until wilted. Taste and season with salt and more spice as you see fit.
