Steps:
- Muddle basil in gin in the bottom of a cocktail shaker. Add pineapple juice, lime juice, simple syrup, and ice. Cover and shake until the outside has frosted.
- Strain into a highball glass over ice and top with club soda.

GIN BASIL SMASH

This drink demonstrates so ably how fresh ingredients can be incorporated into everyday drinking cocktails. Head to your kitchen garden or snag a big bunch of basil at the farmers' market, and you're mere steps from a living drink that will make your head dizzy. This drink smashes basil, but you can smash anything-tarragon, thyme, cilantro, or kefir lime leaves. Let this drink inspire you. Steps:
- Make the simple syrup:
- Heat the sugar and water in a saucepan over medium heat. Do not boil. Stir until sugar dissolves, about 3 to 5 minutes, then remove the pan from the stove. Cool. Transfer the syrup to a clean bottle or jar. Cover and refrigerate.
- Make the cocktail:
- Muddle basil leaves with lemon juice and simple syrup. Add ice and gin and shake. Double-strain into a chilled cocktail glass with ice. Garnish with a basil sprig.
WATERMELON COCKTAIL WITH GIN AND BASIL
Steps:
- Put 1 cup water, 1 cup sugar and a small bunch of basil in a small saucepan. Boil until sugar dissolves, discard the basil and chill. Peel 1 small watermelon (3 pounds), and cut the flesh into large chunks. Purée them in a blender until smooth. Pour the purée through a fine-mesh strainer, and discard the solids. Combine the juice with the chilled basil syrup and about 1/2 cup gin. Serve over ice.
LIVE BASIL GIMLET
Steps:
- Put 4 basil leaves in a cocktail shaker and press them gently with a muddler or a wooden spoon. Add the gin, lime juice and simple syrup. Fill with ice, shake vigorously and strain into a chilled coupe or other small glass. Garnish with the remaining basil leaf.
