Steps:
- In large saucepan, cook tomatoes and basil over medium-low heat until tomatoes are soft.
- Meanwhile, in medium skillet, saute onion and garlic in olive oil until onions are translucent.
- Add onion mixture to tomato mixture and add salt and pepper. Let simmer on low heat for 2 hours or until thick.

- In a large saucepan, saute mushrooms and onions in oil. Add garlic; cook 1 minute longer. Add the tomatoes, wine, basil and salt. Bring to a boil; simmer, uncovered, for 5 minutes. Stir in the sausage and tomato paste; heat through. Serve with pasta.

- Tip in the chopped tomatoes, vegetable stock powder, tomato purée and sugar, then bring to the boil. Reduce the heat, then simmer uncovered for 5 mins, stirring occasionally.
- To finish, tear a few basil leaves, then stir into the sauce.

CREAMY BASIL SAUCE
No actual cream is used. This is very nice over pasta. If you want you can also add some smoked salmon or chunks of tunafish.

- Melt margarine in sauce pan and saute garlic for 1 minute.
- At low temperature add flour.
- Stir to make a paste.
- Slowly add milk to paste until you achieve an even consistency.
- Add salt, basil, parmesan or pecorino and pepper to sauce and cook over low heat until you reach a desired thickness.
- Pour over freshly cooked pasta.

TOMATO-BASIL SAUCE

- Coat a saucepan with 2 tablespoons of the oil and warm over medium-low heat. Add the garlic and cook, stirring, until soft. Add the crushed tomatoes and sugar; season with salt and pepper. Turn the heat up slightly to medium and simmer the sauce for 10 minutes, stirring occasionally. Stir in the basil and the remaining olive oil. Toss with spaghetti, if desired.
BASIL CREAM SAUCE
After a mad search on the net for a recipe for this sauce I had to create my own. This can be reheated in the microwave without the usual cream sauce defects. I just love the light green color and how well it displays over tri color or regular pasta, salmon and grilled chicken. I have been putting this on everything.

- In a food processor, combine basil and garlic. Begin processing, and pour in olive oil in a thin stream. Process for about 40 seconds, or until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for 1 minute.
- Heat cream in a saucepan over low heat until simmering. Pour 1/2 of the hot cream into the processor with basil pesto, and pulse for 20 seconds to incorporate. Pour mixture back into cream, and simmer for 5 minutes, or until thickened.

- In a medium saucepan, combine chardonnay, shallot, garlic and bay leaf. Place over medium heat, and boil until reduced by half. Add the cream, and continue to reduce until mixture is thick enough to coat the back of a spoon. Remove pan from heat, discard bay leaf, and allow to cool.
- Transfer mixture to a blender, and add fresh basil. Puree until smooth.
- Season with salt and pepper to taste. Return sauce to pan, and place over low heat. Add butter, stir until melted, and remove from heat. Serve warm.

RICH BASIL PASTA SAUCE
The ingredients are very simple but the flavor is very rich and deep. My mom told me to make a pasta sauce with some fresh basil she had on hand. I searched everywhere for something simple with simple ingredients and couldn't find anything so I created this. I used it with spaghetti but works will with any pasta. It's very good!! I like to mix the milk with whipped chive flavored cream cheese for extra kick.

- Put garlic cloves and basil in food processor and process until smooth.
- Add olive oil and paramsean to the mixture and process until smooth.
- Set aside.
- Heat the butter onto a large pan or wok until melted.
- Mix in the basil mixture and stir over medium heat.
- Cook until garlic is clear and basil is soft for 4 minutes.
- Slowly add the milk into the wok/pan while stirring. Simmer for 5-8 minutes.

- This preserves the bright green color. Start a small pot of water to boil. Prepare a bowl of ice water. Remove the basil leaves from the stem and wash them; measure out 1 packed cup of leaves (make sure to pack the cup full for the best flavor). Once the water is boiling, add the basil and boil until bright green, 30 seconds to 1 minute.
- Immediately turn off the heat, remove the basil and plunge it into the ice bath. Once the leaves are cool, remove them from the water and squeeze out as much excess water as possible.
- Place the blanched basil, olive oil, garlic and salt in a blender or in the cup for an immersion blender. Blend until fully combined. Taste and add lemon juice and additional salt to taste. Use immediately or refrigerate for up to 1 week.
