- Combine all of the meatlof ingredients in a medium size bowl. Form into a loaf in a large loaf pan. (Or 6 small loaf pans).
- Prepare, sauce and spread over the top.

GRILLED BBQ MEATLOAF

- Preheat an outdoor grill for medium heat, and scrape the grates clean. Spray grates with nonstick cooking spray.
- In a bowl, mix together the ground beef, ground pork, bread crumbs, onion, egg, Worcestershire sauce, garlic, tarragon, sea salt, and black pepper. Divide the mixture in half, and form 2 loaves, each about 4 inches in diameter and 6 inches long. In a small bowl, mix the barbecue sauce with ketchup until well combined.
- Place each meatloaf directly on the prepared grill grates, then spread each with about 3 tablespoons of barbecue sauce mixture; grill until the loaves reach an internal temperature of at least 160 degrees F (73 degrees C), about 1 hour.

- Position a rack in the center of the oven and preheat to 325 degrees F. Line a large baking sheet with parchment paper.
- Put the bacon in a large saute pan and cook over medium heat until most of the fat has rendered and the bacon is crispy, about 10 minutes, stirring occasionally. Use a slotted spoon to remove the bacon to a large bowl. Increase the heat slightly (between medium and medium-high) and add the onions to the bacon fat in the pan and cook until tender, about 5 minutes, stirring occasionally. Add the garlic and cook until tender, about 1 minute, stirring constantly. Transfer to the bowl with the bacon. Stir in the chopped ribs and pulled pork. Cool completely.
- Add the beef, eggs, breadcrumbs, mustard powder, smoked paprika, basil, thyme, 1 to 1 1/2 teaspoons salt (depending on how salty the ribs and pulled pork are) and several heavy grinds of pepper. Use your hands to mix until well combined. Form into a 9-by-3 1/2-inch loaf that is about 2 inches tall on the prepared baking sheet. Spread 1/4 cup of the BBQ sauce evenly over the top of the meatloaf.
- Bake for 30 minutes, and then spread the remaining 1/4 cup BBQ sauce on top of the partially cooked meatloaf. Continue to bake until a thermometer inserted into the center of the meatloaf registers 160 degrees F, about 45 more minutes.
- Serve with additional warm BBQ sauce alongside.
BBQ MEATLOAF
Meatloaf is a family staple going way back before Alice on the Brady bunch was stopping off at the butcher shop to visit with Sam to pickup 10 lbs of ground beef at a time for the family meatloaf. It's been a family staples for years equally wonderful served cold, sliced on sandwich as well as hot with mashed potatoes and gravy. This wonderful loaf is an upscale version of the usual that's out there. I've added some fresh peppers and onions, with BBQ sauce and a few more flavorful side ingredients. Please feel free to add in or change the recipe as you see fit to create something deliciously comfortable for your family.

- Preheat oven to 350° F.
- Combine the beef, pork, breadcrumbs, pepper and onion, 1/3-cup barbecue sauce, and remaining ingredients in a large bowl.
- Shape meat mixture into a 9 x 5-inch loaf on a broiler pan coated with cooking spray. Spread remaining barbecue sauce over top of meat loaf, and bake at 350° F for 1 hour or until a thermometer registers 160°.
- To get the best flavor remove the meatloaf from the oven ½ way through the cooking process to drain off the fat and return to the oven to cook until finished.
- Let stand 15 minutes before cutting.

I have to admit that a regular meatloaf doesn't really appeal to me that much. So when someone in my family requested meatloaf, I decided to try something different! I made it a few times before I actually wrote the recipe down. This is a hit with my family every time and my sister requests it frequently. It's moist, flavorful, juicy, and really good as a leftover if you slice it and fry it. It's hard to go wrong with bacon and cheese! Hope you enjoy it as much as we do!

- Place bacon slices in the freezer until firm, 10 to 15 minutes.
- Meanwhile, preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish with cooking spray.
- Combine ground beef, milk, oats, Colby-Jack cheese, onion, 1/2 cup barbecue sauce, eggs, garlic pepper, and salt in a mixing bowl.
- Remove bacon from the freezer and dice; add to the beef mixture. Mix all ingredients together thoroughly; I like to use a potato masher. Transfer into the prepared baking dish and form the top into a loaf. Evenly cover the top of the loaf with remaining barbecue sauce.
- Bake, uncovered, in the preheated oven for 1 hour 15 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).

- Transfer diced bread into a bowl (soup bowl will do) and pour over the milk. Soak until soft, but don’t wait until it turns mushy.
