TURKEY BBQ MEATLOAF WITH ROASTED CORN SALSA

This is so not your mom's meatloaf! This one is made with ground turkey, a sweet and savory BBQ glaze and homemade corn salsa.

Turkey BBQ Meatloaf with Roasted Corn Salsa image

Steps:

  • Heat oven to 375ºF.
  • Combine corn, tomatoes, dressing, onions, cilantro and 2 Tbsp. barbecue sauce. Refrigerate until ready to use.
  • Mix turkey, stuffing mix, water, onions, chiles, eggs and 1/3 cup of the remaining barbecue sauce just until blended; shape into loaf in shallow baking dish sprayed with cooking spray.
  • Bake 1 hour. After about 45 min., mix remaining barbecue sauce with preserves, mustard and chili paste in saucepan; cook on medium heat until heated through, stirring occasionally.
  • Brush meatloaf with barbecue sauce mixture; bake 20 to 25 min. or until done (165ºF). Let stand 5 min. before slicing and serving with the corn salsa.

Turkey Meatloaf With BBQ Glaze image

Steps:

  • Preheat the oven to 350 degrees F.
  • In a small skillet over medium-low heat, add 2 teaspoons of the oil and heat until shimmering, about 2 minutes. Add the onion and cook until softened and brown, about 10 minutes. Add the parsley and cook another 1 to 2 minutes. Remove the mixture and set aside to cool. Add the remaining teaspoon of oil to the same skillet. Add the carrots and cook until softened, about 5 minutes.
  • Place the ground turkey, breadcrumbs, ketchup, egg, the onion mixture, 1 teaspoon salt and some pepper in a food processor and pulse until fully combined. Transfer to a large bowl and add the carrots. Mix until combined. Form into a loaf and transfer to a casserole dish or baking sheet. Using a pastry brush, spread the BBQ Glaze over the top. Drape the bacon over the loaf in a crisscross pattern, tucking the ends underneath. Brush more glaze over the bacon layer. Bake until firm and cooked through, 55 to 60 minutes. Let rest for 5 minutes before serving.
  • Stir together the ketchup, chili sauce, brown sugar, dry mustard and 1/3 cup water in a large saucepan. Bring to a boil, stirring to dissolve the sugar. Remove from the heat and set aside.

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, mix BBQ seasoning, crab boil seasoning, soy sauce, beaten egg, 1 cup of the BBQ sauce and Worcestershire sauce.
  • In a saute pan over medium-high heat, add olive oil. Add onion, bell pepper, salt and pepper and garlic. Saute until tender. Remove from heat and add to wet mix.
  • Pour mixture into bowl with the ground turkey. Add bread crumbs and mix all together with your hands.
  • Transfer the meat mixture to a cookie sheet or baking pan. Using your hands, shape the meat into an oblong or rectangular shape. *Cook's Note: Alternately, you can pat the meat into a 9 by 5-inch loaf pan and pour 1/2 cup of BBQ sauce on the top of the loaf.
  • Bake for 35 minutes. Remove and add the reserved 1/2 cup of BBQ sauce to the top and continue to bake for 20 more minutes.
  • Add all ingredients to a bowl and stir until combined. Keep in an airtight container for up to 6 months.
  • In a large saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to a simmer. Cook uncovered, stirring frequently, for 1 hour 15 minutes.

Grilled Turkey or Chicken Cutlets with Black Bean, Corn, Tomato and Avocado Salsa image

Steps:

  • 1. Whisk the mustard and vinegar in a large bowl, season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Gradually whisk in the olive oil. Season the cutlets with some salt and pepper and put in a large non-reactive glass or ceramic bowl. Pour about a 1/4 cup of the dressing over the cutlets and turn to coat evenly. Cover and marinate for 15 minutes at room temperature, or in the refrigerator for up to 8 hours.
  • 2. Add the beans, corn, and tomatoes to the remaining dressing. Season the salsa with salt and pepper and toss to coat evenly. Add the avocado and cilantro and gently mix, taking care not to break up the avocado.
  • 3. Preheat a stovetop grill or grill pan on medium-high. Drain the cutlets and grill until lightly browned and firm to the touch, about 3 to 4 minutes per side. Serve hot with the salsa.

  • Heat oven to 350 degrees F.
  • Using your hands, combine all ingredients, except the ketchup, in a medium bowl until well mixed.
  • Spray a 8 1/2 x 4 1/2 x 2 1/2 loaf pan with cooking spray.
  • Pack the meatloaf mixture into the loaf pan. Drizzle ketchup over meatloaf.

  • Heat oil in a medium skillet. Add celery and onion and cook until tender, about 10 minutes. Add garlic and cumin and cook for a minute, then set aside to cool slightly.
