This recipe is about 50 years old. I don't know if it was ever on a box of Bisquick® or not. It was given to me.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 9x13-inch baking dish.
- Beat baking mix, eggs, and sugar together into a smooth batter. Fold coconut and pecans through the batter.
- Bake in preheated oven until set in the center, 30 to 35 minutes.

BREAKFAST DELIGHT ROUNDS
This is one of the best breakfasts I have had; I even eat them for a snack. Even if you don't care for peanut butter that much you might LOVE these!

Steps:
- Toast English muffins; meanwhile heat brown sugar, butter and cinnamon together for a few seconds in microwave or until completely melted.
- Stir.
- Spread peanut butter on muffins and then top with apple slices.
- Spread sugar mixture on top of apple slices.
- Enjoy.
- You can sprinkle a little lemon juice on the half of apple that you don't use and keep in the fridge until next use.

BECKY'S SOUTHWEST BREAKFAST CASSEROLE
Crescent rolls, Jimmy Dean hot breakfast sausage, onions, peppers, salsa and two types of cheese make this a favorite breakfast or brunch dish-- with a Southwest flair! Can be made ahead. Serve warm or at room temperature, accompanied with sour cream and salsa or picante sauce. Deelish!

Steps:
- Butter a 13 by 9-inch glass baking dish.
- Unroll the rolls and press into bottom of baking dish, sealing perforations and coming halfway up the sides to form a crust.
- In a large skillet, cook the sausage over medium-high heat, stirring to break up the meat, until browned. Add the onions and green chile peppers, and cook, stirring, for 4 minutes. Add the salsa and garlic powder, and cook, stirring, for one minute. Remove from heat.
- Pour sausage mixture over the rolls.
- In a large bowl, stir together the two cheeses with the green onions and the cilantro; sprinkle evenly over the sausage.
- At this point you may continue, or cover & refrigerate casserole overnight.
- In a large bowl, whisk together the eggs with the salt and black pepper; and pour over the top of the casserole.
- Preheat oven to 350 degrees F.
- Cover casserole with foil and bake for 30 minutes; remove cover and bake for another 10 to 15 minutes until golden brown and bubbly.
- Remove from oven and let rest 10 minutes before serving. Cut into squares and serve warm or at room temperature, accompanied with sour cream and salsa or picante sauce.

- Add 7-grain cereal and rolled oats to a large bowl, or the bowl of a stand mixer fitted with a kneading hook. Pour boiling water over. Stir, then let stand until water cools to just lukewarm, about 10 minutes.
- *Be sure mixture is not too hot when you add the yeast. For instant yeast, you want it no more than 125F. For active dry yeast, it should be more like 110F.
- Add yeast, wheat bran, brown sugar, ground flax seed, sunflower oil and salt. Stir to combine. Add mashed banana and walnuts and stir in. Add 1 1/2 cups of the flour and stir to combine. *If mixing by hand, remove dough from bowl to a very well floured surface if it gets too hard to stir and begin adding flour through kneading instead.
- Continue adding flour 1/4 cup at a time at first, then a tablespoon at a time until you have dough that forms a ball, but that is quite moist and just a bit sticky. If making by hand, remove dough to a greased bowl. If making in a stand mixer, just leave the dough in the mixer. Cover bowl or stand mixer bowl with plastic wrap and let stand 45 minutes.
