LOW-CARB BACON CHEESEBURGER CASSEROLE

Need a simple ground beef casserole to feed your family or friends? They will love this easy low-carb bacon cheeseburger casserole.

Low-Carb Bacon Cheeseburger Casserole image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef with garlic and onion powder until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Spread beef onto the bottom of a 9x13-inch casserole pan. Stir in bacon pieces.
  • Whisk eggs, heavy cream, salt, and pepper in a medium bowl until well combined. Stir in 8 ounces Cheddar cheese.
  • Pour egg mixture over the beef and bacon. Top with the remaining 4 ounces cheese.
  • Bake in the preheated oven until golden brown on top, 30 to 35 minutes.

1 (12 ounce) package shredded Cheddar cheese, divided

BEEF AND BACON CASSEROLE

This is one of my favourite 'winter warmers'. The bonus is that it's also diet friendly too. My friends ask for this one time and again and don't realise it's from a 'diet' recipe book! (Note: Australian measurements used.)

Beef and Bacon Casserole image

Steps:

  • Cut steak into 2.5cm (1 inch) cubes. Wrap the bacon in absorbent paper & cook in the microwave for 2 minutes. Chop.
  • Coat a large pan with cooking spray, heat & cook onions and garlic until onions are slightly browned. Add steak & cook, stirring, until well browned.
  • Stir in wine, tomato paste, water & stock cubes. Simmer, covered for 45 minutes.
  • Stir in mushrooms & chilli. Cook a further 10 minutes. Stir in the bacon & tarragon. Serve.

  • Add garlic and onion then cook until onions are soft, remove onions and garlic mixture from pan then set aside.
  • Now add the beef in the pan then brown on all sides, once evenly sprinkle the flour over the beef and cook for 1 more minute. Remove beef then set it aside. Note do not overcrowd the pan, if needed you can do it first with half the amount of beef then do this step twice.
  • Pour 1 cup of wine into the pan and bring it to a boil to deglaze. Return the beef, bacon, onion mixture to then pan.
