BOW-TIE SKILLET ALFREDO

- Bring a large pot of water to a boil. Cook the pasta according to the package directions. Drain and set aside.
- Slice the chicken into thin strips and season with salt and pepper. Heat the butter and oil in a large skillet over medium-high heat. Add the chicken strips and cook until deep golden brown on both sides and done in the middle. Remove the chicken from the skillet and add the minced garlic. Cook the garlic for 1 minute, then pour in the broth. Let it bubble up and reduce for 1 1/2 to 2 minutes.
- Next, add the half-and-half, cream and some salt and pepper. Add the Parmesan, whisking constantly until it's all combined. Allow the liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth.
- When the sauce looks good, remove it from the heat. Return the cooked chicken to the skillet along with the grape tomatoes, spinach and pasta. Toss, taste, adjust the seasoning, top with minced parsley and serve immediately in the skillet!

- Spray a large skillet with cooking spray. Sauté steak over medium-high heat for about 3-5 minutes per side, or until it is cooked to your liking (keeping in mind that steak will continue to cook slightly once removed from the heat). Keeping skillet hot, transfer steak to a cutting board and allow to rest for about 10 minutes (this allows the juices to settle into the meat so they are not lost in cutting). Cut steak across the grain into thin slices.
- Add peppers and mushrooms to hot skillet. Sauté until tender (3-5 minutes).
- Add slices steak, cooked pasta, asparagus and alfredo sauce to cooked peppers and mushrooms. Cook until evenly heated (approx. 2-3 minutes), stirring constantly, taking care not to boil it.
- Season with pepper. Top each serving with parmesan (if using).

- Heat oven to 350°F. Grease or spray 2-quart casserole. Cook and drain pasta as directed on package. Cook frozen broccoli as directed on bag.
- In greased casserole, mix all ingredients except basil. Cover.
- Bake about 20 minutes or until hot and bubbly. Sprinkle with basil just before serving.

- In a large bowl, combine egg, bread crumbs, water, cheese and seasonings. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. In a Dutch oven, brown meatballs in oil in batches; remove and keep warm. , Drain, reserving 1 tablespoon drippings. In drippings, saute onion until tender. Add garlic; cook 1 minute longer. Add wine; cook and stir 3 minutes., Return meatballs to pan; stir in tomatoes and parsley. Bring to a boil. Reduce heat; cover and simmer 25-30 minutes or until meat is no longer pink. , Meanwhile, preheat oven to 400°. Cook rigatoni according to package directions. , In a small saucepan, melt butter. Stir in flour until smooth; gradually add cream. Bring to a boil; cook and stir 1-2 minutes or until thickened. Remove from heat. Stir in 3/4 cup Parmesan cheese., Drain rigatoni; place in a large bowl. Add meatballs and sauce; stir to coat. Transfer to a greased 13x9-in. baking dish., Top with Alfredo sauce; sprinkle with thyme, oregano and remaining Parmesan cheese. Bake, uncovered, 20-25 minutes or until bubbly.
