BEEF KABOBS WITH CHUTNEY SAUCE

I created this speedy grilled entree for our daughter, a fan of Indian food. The mango chutney and subtle curry give the beef a sweet and spicy flavor. -Judy Thompson, Ankeny, IA

Beef Kabobs with Chutney Sauce image

Steps:

  • In a large shallow dish, combine the first 5 ingredients. Add the beef; turn to coat. Refrigerate, covered, overnight., In a small bowl, combine the sauce ingredients. Cover and refrigerate until serving., Drain beef, discarding marinade. Thread beef onto 8 metal or soaked wooden skewers., On a lightly oiled grill rack, grill kabobs, covered, over medium heat or broil 4 in. from the heat for 4-6 minutes or until meat reaches desired doneness, turning occasionally. Serve with sauce.

1 teaspoon curry powder
1/4 teaspoon cayenne pepper

1/2 cup plain yogurt
3 tablespoons mango chutney
1 teaspoon lemon juice
1/2 teaspoon curry powder
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper

Steps:

  • Thread first 4 ingredients alternately onto 8 skewers; place in shallow dish.
  • Pour dressing over kabobs; turn to evenly coat kabobs. Refrigerate 1 hour to marinate.
  • Heat grill to medium heat. Drain kabobs; discard marinade. Grill kabobs 15 min. or until meat is done and vegetables are crisp-tender, turning occasionally. Serve over rice.

Steps:

  • Mix all ingredients except meat, mangos, peppers and rice until blended. Pour 1/2 cup over meat in shallow dish. Refrigerate 30 min. to marinate.
  • Heat grill to medium heat. Remove meat from marinade; discard marinade. Thread meat alternately onto 6 skewers alternately with mangos and peppers.
  • Grill 12 to 15 min. or until meat is done, turning occasionally and brushing with remaining steak sauce mixture for the last 5 min. Serve over rice.

Steps:

  • Partially freeze beef to firm; slice into 1/8\" thick strips.
  • Combine yogurt, lemon juice, curry and red pepper.
  • Place beef strips and marinade in plastic bag, turning to coat.
  • Close bag securely and marinate in refrigerator 30 minutes, turning occasionally.
  • Meanwhile, soak 12\" bamboo skewers in water.
  • Peel mango and cut into 3/4\" pieces.
  • Remove beef from marinade; discard marinade.
  • Thread equal amounts of beef strips (weaving back and forth) and mango pieces on each skewer.
  • Place kabobs on grid over medium coals.
  • Grill 4-5 minutes, turning once.
  • Season with salt to taste.
  • NOTE: Peaches, nectarines, plums or pineapple may be substituted for mango. Peel and cut fruit into 3/4\" pieces. If doubling the recipe, try using different fruits.

Steps:

  • In a large resealable plastic bag, mix the teriyaki sauce, honey, garlic powder, and ginger. Place red bell peppers, onion wedges, mushrooms, beef, and chicken in the bag with the marinade. Seal, and refrigerate 4 to 24 hours.
  • Preheat grill for medium-high heat.
  • Discard marinade, and thread the meat and vegetables onto skewers, leaving a small space between each item.
  • Lightly oil the grill grate. Grill skewers for 10 minutes, turning as needed, or until meat is cooked through and vegetables are tender.
