Beef Tenderloin with Port Sauce image

Steps:

  • Place the beef and broth in a 6-quart Dutch oven, making sure the beef is totally covered by the stock, and cover with foil, leaving a small opening for steam to escape. Poke a small hole in the foil and insert an instant-read thermometer into the meat. Cook over low heat until the beef reaches 125 degrees F, 55 to 60 minutes. Transfer the beef to a cutting board and let stand 10 minutes.
  • In a medium saucepan, bring the port to a boil and then reduce until about 1/3 cup. Remove from the heat and whisk in the butter. Season with salt and pepper.
  • To serve, slice the beef, top with sauce and garnish with parsley.
  • What Makes This Recipe Really Sing: Because the beef is brought to temperature up so slowly, it is very tender. It would make a killer steak sandwich.

1 (2-pound) beef tenderloin, trimmed and tied
2 quarts beef stock
1 cup ruby port
2 tablespoons unsalted butter

BEEF TENDERLOIN WITH ROASTED GARLIC AND PORT WINE SAUCE image

Steps:

  • 1. Preheat oven to 375 degrees F. In 9 inch pie pan, toss garlic cloves with oil to coat. Season with salt and pepper. Roast until cloves are golden and very tender, stirring occasionally, about 30 minutes. 2. In a large saucepan, combine beef broth and port. Bring to a boil. Cook over high heat until the volume is reduced by half, about 30 minutes. Whisk in tomato paste. Set aside. 3. Rinse meat. Trim away some of the fat to remove the silvery cartilage underneath. With a very sharp knife, begin taking the fat off the top, revealing the silver cartilage underneath. (You definitely don't want to take every last bit of fat off. As with any cut of meat, a little bit of fat adds to the flavor.) 4. Pat beef dry; rub with thyme, salt and pepper. In a large roasting pan, set over medium heat on the stove top, saute bacon until golden. Using a slotted spoon, transfer bacon to paper towels. Add beef to pan; brown on all sides over medium high heat, about 7 minutes. 5. Place meat on a roasting rack. Transfer pan to oven. Roast beef until meat thermometer inserted into center registers 140-145 degrees F (about 30-45 minutes, check frequently). Transfer beef to platter. Tent loosely with foil. (Do not overcook; meat will continue to cook after it is removed from the oven. Yes, it WILL be pink and a little bloody, but that is okay, I promise!) 6. Place the roasting pan with the drippings over high heat on stove top. Add broth mixture, and bring to boil; stir to scrape up any browned bits. Transfer to a medium saucepan, and bring to simmer. Mix 1 1/2 tablespoon butter and flour in small bowl to form smooth paste; whisk into broth mixture, and simmer until sauce thickens. Whisk in remaining butter. Stir in roasted garlic cloves and reserved chopped bacon. Season with salt and pepper. 7. Cut beef into 1/2 inch thick slices. Spoon sauce over the beef.

Steps:

  • Preheat oven to 375 degrees.
  • In a 9 inch diameter pie pan, toss shallots with olive oil to coat.
  • Season with salt and pepper.
  • Roast shallots until they are deep brown and very tender, stirring occasionally, about 30 minutes.
  • Boil stock and Port in a large saucepan until reduced to 3 3/4 cups, about 30 minutes.
  • Whisk in tomato paste.
  • (Shallots and stock reduction can be made 1 day ahead. Cover separately; chill.) Pat beef dry; sprinkle with thyme, salt and pepper.
  • In a large roasting pan set over medium heat, saute bacon until golden, about 4 minutes.
  • Transfer bacon to paper towels to drain.
  • Add beef to pan; brown on all sides over medium-high heat, about 7 minutes.
  • Transfer pan to oven; roast beef until meat thermometer inserted into center registers 125 degrees for medium-rare, about 45 minutes.
  • Transfer beef to platter, tent with foil.
  • Spoon fat off top of pan drippings in roasting pan.
  • Place pan over high heat.
  • Add stock/port mixture and bring to a boil, scraping up any browned bits.
  • Transfer to a medium saucepan; bring to a simmer.
  • Mix 3 tablespoons butter and all the flour in a small bowl to form a paste; whisk into stock and simmer until sauce thickens, about 2 minutes.
  • Whisk in 3 tablespoons butter.
  • Stir in roasted shallots and reserved bacon.
  • Season sauce to taste.
  • Cut beef into 1/2 inch thick slices.
  • Spoon some sauce over.
  • Pass remaining sauce.

  • In a large saucepan, combine beef broth and port. Bring to a boil. Cook over high heat until the volume is reduced by about one-third, about 30 minutes. Whisk in tomato paste. Remove pan from heat and set aside. This can be a done a day in advance or earlier in the day if you'd like.
  • Trim the tops off the heads of garlic with a sharp knife to expose the tops of the cloves and remove some of the papery outer skins. Drizzle them with olive oil and season with a little sea salt.
  • Pat the beef dry with paper towels. Fold the thinner, tapered end underneath to create an evenly sized roast and then use kitchen twine to tie it at 2-inch to 3-inch intervals, or as needed. Sprinkle both sides of the beef with salt, thyme, and pepper. Add olive oil to a large roasting pan and set it over MEDIUM-HIGH heat (you may need to use two burners). Add the tenderloin to the hot pan and sear for about 4 minutes per side. Place trimmed garlic around the beef and transfer the pan to preheated oven.
