ROMAN STYLE TRIPE

When prepared in this method, tripe has a pleasantly mild, but distinct flavor. When it comes to great sauces for dipping crusty Italian bread, it doesn't get any better than this.

Steps:

  • Combine water, tripe, vinegar, salt, vanilla, and bay leaf in a large stockpot over high heat. Bring to a boil and skim off any foam that accumulates. Reduce heat to medium-low, cover pot, and simmer for 1 1/2 hours. Transfer tripe to a plate and set aside to cool. Reserve 1 to 2 cups of the cooking liquid.
  • Heat oil in a large skillet over medium heat. Add pancetta and onion; cook and stir until pancetta is browned and onion is translucent, 6 to 7 minutes. Stir garlic into pancetta mixture; cook and stir until aromatic, about 2 minutes.
  • Stir marinara sauce, 1 cup reserved tripe liquid, and red pepper flakes into the pancetta mixture. Reduce heat to low and simmer for 30 minutes.
  • Cut tripe into 1-inch cubes and add to marinara-pancetta sauce; stir to combine. If needed, add 1 cup of the reserved tripe liquid. Simmer for 30 minutes.

  • Place beef tendon in a pressure cooker and add water to cover beef completely. Place on high heat until rated pressure has been reached. Turn to lowest heat. Simmer at rated pressure for 30 minutes. Turn off heat and allow the pressure to release naturally.
  • While simmering the beef tendon, prepare beef plate. Add beef plate into a large pot and add water to cover the meat. Bring to a boil over high heat. Turn to medium-low heat and keep a gentle boil going for 10 to 15 minutes. While boiling, skim the foam from the top of the broth and discard it. Turn off heat. Use a colander to transfer beef to a wok (or a large dutch oven). Let the soup sit about 10 minutes, then pour the soup into the wok until it covers the beef completely. (There may be some clotted blood on the bottom of pot. Try to avoid pouring it into wok.) Save the rest of the soup in the pot and set it aside for later use.
  • Heat the wok over medium heat. Add Shaoxing wine, chili pepper, ginger, scallion, bay leaves and black pepper (* see footnote) into wok and simmer, covered, for about 40 minutes. The beef tendon should be ready at that point.

  • Thoroughly rinse the tripe under cold running water. In your wok, add the tripe, water, salt, ginger, scallion, and shaoxing wine. Place it over high heat until the water comes to a boil. Turn off the heat and let it sit for 5 minutes. Remove the tripe from the wok and rinse with cold water. Put in a colander to drain. This step "cleans" the tripe and makes the flavor a little bit more mild.
  • After the tripe has cooled, cut it into 1 1/2 x 2 1/2 inch pieces. In Dim Sum restaurants that serve this dish, this is generally the minimum size because the tripe will shrink further as it cooks. But you can really cut whatever size you prefer.
  • Heat a large pot over medium high heat and add the oil, ginger slices, and star anise. Let it cook for about 30 seconds. Turn the heat to high and immediately add the tripe. Cook, stirring constantly, for about 2 minutes. Add the shaoxing wine and stir another 30 seconds.
  • Next, add soy sauces, brown sugar, water, sesame oil and white pepper. Stir until everything's combined. Bring the mixture to a boil and turn it down to a simmer. Cook for 20 minutes, stirring frequently. Cook the beef tripe a bit longer if you like your tripe more tender but Chinese like the tripe in this dish a little bit chewy.
