FRIED BEETS
My mom loved these and I have never heard of anyone preparing beets quite this way! Not exactly a health-food, but so tasty! Mother said, 'Cook them until they're burned.' She was right! You may also need to add a little more butter or margarine if they seem to need it.

Steps:
- Bring a large pot of lightly salted water to a boil. Add beets and cook uncovered until slightly tender, about 20 minutes. Drain, rinse, and cut ends from each beet.
- Place beets in a saucepan with about 2 inches of water. Cover saucepan and bring water to a boil; cook beets until tender, about 20 minutes. Remove beets from water and immediately immerse in a bowl of ice water to cool. Pull peels off the beets. Slice beets into 1/4-inch-thick slices.
- Heat butter in a large skillet over medium-high heat; fry beets, flipping occasionally, until lightly blackened, about 20 minutes. Season beets with salt and pepper.

Steps:
- Peel the beetroot and slice thinly (halve the slices if they are very big).
- Clean and dice the potatoes.
- Heat oil in a wok and stir-fry the potatoes circa 2 minutes.
- Add beetroot and cook circa 2 minutes.
- Add orange juice, honey, and soy sauce and simmer under cover until cooked (circa 10 mins).
- Clean and slice scallions. Serve stir-fry with scallion slices.

Steps:
- Preheat the oven to 190c/fan170c/gas 5.
- Put the cream garlic and thyme over a medium heat. Bring to a simmer, then remove from the heat and allow to infuse for 10 minutes.
- Pass through a sieve and set aside, discarding the garlic and thyme.
- Slice the potatoes and beetroot to about 2mm thick use a mandolin if you have one.Pour a thin layer of cream into the bottom of a fairly deep 2 litre oven proof dish.Layer half the potatoes on top of the cream, pour over more cream and season to taste. Add all the beetroot in 1 layer.Add more cream, season, then top with the remaining potatoes. Pour over the remaining cream and season.
- Bake for 50-55 mins or until bubbling, golden and tender - a knife should go through without resistance.
