- In a medium-sized microwave-safe bowl, combine the Coffee-mate powder with 2 oz. of warm water and stir until dissolved.
- Next add Almond Breeze and pudding mix, and stir until mixture is well blended.
- Add all other ingredients to the bowl and stir. Microwave for 3 minutes, and then allow to cool and thicken. Dig in!

BLUEBERRY COCONUT OATMEAL PUDDING
I spoon this comforting, sweet pudding into ramekins and serve it as a dessert, but you could also make it a breakfast splurge. You can serve it hot or cold.

Steps:
- Combine the water, salt, coconut milk, honey or agave nectar and vanilla in a large (3-quart) saucepan and bring to a boil. Stir in the oatmeal and bring back to a boil, stirring. Reduce the heat to low, cover and simmer 5 minutes, stirring occasionally. Stir in half the blueberries, cover, and cook another 5 minutes, until the oats are cooked and the mixture is creamy.
- Stir in the rose water and the remaining blueberries. Turn off the heat, return the lid and let sit for 5 to 10 minutes. Serve right away, or spoon into serving dishes and allow to cool in the refrigerator.

STRAWBERRIES AND CREAM OATMEAL
I tried this one morning when I was out of blueberries (my usual favorite) and it is surprisingly good! I am posting it because, like me, I am sure not too many people would think to put strawberries in oatmeal, but it actually has become one of my favorite ways to eat oatmeal (a daily staple for me!) Also, fruit measurements are estimates, as I usually just use whatever I have.

Steps:
- Add milk to oats in a deep bowl and microwave 3-5 minutes, depending on your microwave wattage and desired thickness. Watch carefully so it doesn't spill over the sides!
- While oatmeal is cooking, wash and slice strawberries. Soft strawberries work well, so you may want to mash them a little bit, but that is up to you.
- When cereal is done, stir strawberries and sliced banana (if using) into oatmeal. If desired, add a little sugar or splenda.
- NOTE: It is also good with a little vanilla extract if you are using plain milk, just to give it some flavor. ALSO, You may need to re-heat oatmeal a little before eating if your strawberries cool it down too much.

- Preheat oven to 350°. Toss blueberries with cinnamon and lemon juice; pour into a greased 8-in. square baking dish. In a small bowl, combine flour, sugar and baking powder; stir in milk and butter. Spoon over berries. , Combine sugar and cornstarch; sprinkle over batter. Slowly pour boiling water over all. Bake until a toothpick inserted into the cake portion comes out clean, 45-50 minutes. Serve warm. If desired, top with whipped cream and additional blueberries.
