WHIPPED CREAM WITH FRESH BERRIES
Steps:
- Add the heavy cream and sugar to the chilled bowl of a stand mixer (you can also use a hand mixer or a whisk and a large chilled bowl). Whip on medium speed until the cream holds soft peaks. Add the vanilla bean paste, creme fraiche, orange zest and orange liqueur and whip on medium speed until the cream holds medium peaks.
- Layer fruit in a bowl, spoon over whipped cream and serve.

- In a medium bowl add the berries and douse with the liqueur. Sprinkle with 1 tablespoon of sugar and let the berries macerate to get their juices flowing.
- In a large bowl, add the cream, 2 tablespoons of the remaining sugar and almond extract. Beat the cream with a whisk or electric beater until the cream forms peaks.
- Serve the berries in dessert dishes topped with whipped cream and crushed amaretti cookies.
BERRIES WITH ITALIAN CUSTARD
Steps:
- Cook's Note: For a nonalcoholic version, substitute the port with 1/4 cup white grape juice mixed with 1/2 teaspoon vanilla extract.
- In a medium bowl, combine the berries with 1 tablespoon port and 1 tablespoon sugar. Allow to sit and macerate while you prepare the zabaione.
- Bring a small pot of water to a boil over medium heat. In a bowl that will fit over the top of the pot, beat the egg yolks with the remaining 1/4 cup sugar with an electric hand mixer until pale. Place the bowl over simmering water and, with the beater running slowly, drizzle in the remaining 3 tablespoons port. Continue to beat until the mixture becomes very thick and has doubled in volume, 5 to 10 minutes. Remove from the heat.
- Divide half the berries among 4 serving glasses. Top each with a generous dollop of zabaione, garnish with the remaining berries and serve immediately.

- In a medium pot mix together the berries, nectarine, sugar, cornstarch, water and lemon juice, bring to a boil then lower heat and simmer until slightly thickened. Pour into a bowl, let cool to warm, then refrigerate for about 2 hours.
- In a medium / large bowl (I used a 7 x 5 inch (18 x 12 cm) start by layering 1/3 of the cake on the bottom of the bowl, top with 1/3 of the berry mixture and top with 1/3 of the pastry cream continue for 3 layers. Cover with plastic wrap and refrigerate for approximately 2-3 hours or even overnight. Top with fresh fruit before serving. Enjoy!
