Whipped Cream with Fresh Berries image

Steps:

  • Add the heavy cream and sugar to the chilled bowl of a stand mixer (you can also use a hand mixer or a whisk and a large chilled bowl). Whip on medium speed until the cream holds soft peaks. Add the vanilla bean paste, creme fraiche, orange zest and orange liqueur and whip on medium speed until the cream holds medium peaks.
  • Layer fruit in a bowl, spoon over whipped cream and serve.

1 cup chilled heavy whipping cream
2 tablespoons confectioners' sugar
1 teaspoon vanilla bean paste
1/4 cup creme fraiche
Zest of 1 orange
1 teaspoon orange liqueur
6 ounces raspberries
6 ounces blueberries
6 ounces strawberries, hulled and cut into quarters

Berries with Almond Cream and Amaretti image

Steps:

  • In a medium bowl add the berries and douse with the liqueur. Sprinkle with 1 tablespoon of sugar and let the berries macerate to get their juices flowing.
  • In a large bowl, add the cream, 2 tablespoons of the remaining sugar and almond extract. Beat the cream with a whisk or electric beater until the cream forms peaks.
  • Serve the berries in dessert dishes topped with whipped cream and crushed amaretti cookies.

2 pints strawberries, hulled and halved
2 ounces orange-flavored liqueur (recommended: Grand Marnier)
3 tablespoons sugar
1 cup whipping cream
1 teaspoon almond extract
12 amaretti cookies, unwrapped and lightly crushed

Steps:

  • Cook's Note: For a nonalcoholic version, substitute the port with 1/4 cup white grape juice mixed with 1/2 teaspoon vanilla extract.
  • In a medium bowl, combine the berries with 1 tablespoon port and 1 tablespoon sugar. Allow to sit and macerate while you prepare the zabaione.
  • Bring a small pot of water to a boil over medium heat. In a bowl that will fit over the top of the pot, beat the egg yolks with the remaining 1/4 cup sugar with an electric hand mixer until pale. Place the bowl over simmering water and, with the beater running slowly, drizzle in the remaining 3 tablespoons port. Continue to beat until the mixture becomes very thick and has doubled in volume, 5 to 10 minutes. Remove from the heat.
  • Divide half the berries among 4 serving glasses. Top each with a generous dollop of zabaione, garnish with the remaining berries and serve immediately.

  • If the puff pastry you bought requires rolling, roll it into 3 pieces of equal size and approx ¼ inch thick.
  • Vanilla Cream: Beat egg yolks with sugar. Add corn starch, vanilla and ½ cup milk. Whisk everything well until a smooth and even texture without any lumps.
  • Heat 1 ½ cup of milk on a stove-top without boiling it. (Yes, you still have some milk left which we’ll use in a few moments). Turn the heat on low and slowly start adding egg yolk, corn starch and milk mixture to the heated milk. Whisk continuously to prevent formation of lumps and cream sticking to the bottom of the pot. Continue whisking until until the cream starts to become pretty thick and turns into custard.

  • In a medium pot mix together the berries, nectarine, sugar, cornstarch, water and lemon juice, bring to a boil then lower heat and simmer until slightly thickened. Pour into a bowl, let cool to warm, then refrigerate for about 2 hours.
  • In a medium / large bowl (I used a 7 x 5 inch (18 x 12 cm) start by layering 1/3 of the cake on the bottom of the bowl, top with 1/3 of the berry mixture and top with 1/3 of the pastry cream continue for 3 layers.
