BERRY BREAKFAST PARFAITS

Berry Breakfast Parfaits image

Steps:

  • Place raspberries and brown sugar in a blender; cover and process until pureed. Press through a sieve; discard seeds. , In a small saucepan, combine the raspberry puree, orange juice, cornstarch and orange zest. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat; cool., In eight parfait glasses, layer half of the raspberry sauce, berries, granola and yogurt. Repeat layers. Sprinkle with additional brown sugar if desired. Serve immediately.

6-1/2 cups frozen unsweetened raspberries
1/4 cup packed brown sugar
1/4 cup orange juice
2 tablespoons cornstarch
1/2 teaspoon grated orange zest
2 cups fresh blueberries
2 cups fresh blackberries
2 cups granola without raisins
4 cups vanilla Greek yogurt
Additional brown sugar, optional

These are a simple yet delicious morning treat. These are easy to make since your refrigerated cinnamon rolls and just adding ingredients.

Super Easy Semi Homemade Blueberry Breakfast Rolls image

Steps:

  • Lightly grease 16 - 2 1/2 inch muffin cups. Remove cinnamon rolls from pkg; set icing aside. Cut each cinnamon roll in half crosswise. Press a roll half in bottom and about 1/2 inch up the side of each muffin cup.
  • In a small bowl stir together blueberries, preserves and lemon peel. Spoon filling into muffin cups. Sprinkle with pecans.
  • Bake in a 375 degree oven for about 12 mins or until golden brown. Cool in muffin cups on wire rack for 5 minutes Remove from muffin cups and place on wire rack to cool for 5 minutes
  • Place icing from the package in a small bowl. If necessary, stir in a little milk to make icing of drizzling consistency. Drizzle icing over rolls. Serve rolls warm.

12 1/2 ounces refrigerated cinnamon rolls (with icing)
1 cup frozen blueberries, thawed and well drained
1/3 cup blueberry preserves
1 teaspoon finely shredded lemon peel
1/4 cup chopped pecans, toasted

  • In an electric mixer, a kitchen aid or bosch mixer works great, add the warm water (about 115 degrees or barely warm on your wrist)
  • To make the berry filling mixture, in a medium-sized pan, combine the water, frozen berries, lemon juice, and sugar, bring to a rapid boil. Add the lemon zest. Combine the cornstarch and 2 Tablespoons of cold water, add to the boiling fruit mixture. Bring the berries back up to a boil. Stir for 1 minute. Take off the heat and let it cool. The mixture will become thicker as it cools. The amount of cornstarch depends on the types of berries you use. If your berry mixture is too runny (you don't want it to run out the edges when you roll the sweet rolls up) add 1 more tablespoon of cornstarch to 1 Tablespoon of cold water. Bring the mixture back up to a boil and add the cornstarch mixture. You should visibly see the berry mixture becoming thicker.
  • To roll out the sweet rolls you will want to lightly flour your countertop and a rolling pin. Separate the dough into 2 portions. Use your rolling pin and roll the dough out into a rectangular shape. You will want your dough to be about 18" tall by about 24" wide. More importantly, the dough should be about 1/2" thick in all areas.
  • Make sure to use soft, room temp butter. In an electric mixer, beat the room temperature butter until light and fluffy. Turn the mixer down very low and add the powdered sugar, and lemon juice. Mix until all the ingredients are combined. Turn the mixer on high again and beat until fluffy. If it's a little too runny for you, add a little more powdered sugar. If it's a little too thick, add a splash of lemon juice.
