BETTA FETA (VEGAN)

This yummy faux feta tastes a lot like dairy feta and can be used as you would use feta cheese. Crumble it over pasta, grains, or raw vegetable salads. Adapted from The Ultimate Uncheese Cookbook by Jo Stepaniak.

Betta Feta (Vegan) image

Steps:

  • Place tofu cubes in a medium saucepan and cover with water. Bring to a boil, reduce heat, cover and simmer 5 minutes. Drain well.
  • While tofu is simmering, prepare brine by whisking together remaining ingredients. Add drained hot tofu cubes to brine and let cool at room temperature 20 minutes.
  • Chill uncovered in the refrigerator until cold to the touch.
  • Cover and chill at least 2-7 days before serving. The longer marinating time will produce a richer tasting, more flavorful feta.
  • Shake or stir contents occasionally to ensure all cubes are evenly covered with brine.
  • Keeps at least 2 weeks in the refrigerator.
  • To serve, remove feta with a slotted spoon and drain well. Enjoy!

  • Stir together all ingredients for the marinade (olive oil, herbs, garlic, and spices). Pour it over the tofu and seal the jar tightly. Give it a good shake making sure the tofu is well coated with the marinade. Refrigerate at least overnight to unfold flavors. (The longer the tofu soaks, the better it tastes).

  • Add the raw cashews, firm tofu, 1/4 cup water, lemon juice, white vinegar, nutritional yeast, salt, garlic powder and onion powder to the blender and blend. It will be thick. Set aside.
  • Add one cup of water and a tablespoon of agar agar powder to a saucepan and bring to the boil stirring constantly. When it starts boiling, set a timer and let it boil (while you continue to stir) for 1 minute.
  • Moving very quickly, as the agar starts to set up fast, pour out the agar/water mix into the blender with the other ingredients and blend in quickly. Then, again very quickly, pour this out into your prepared loaf pan.

  • Add all of the ingredients to a food processor (this recipe does not work well in a blender, even a high powered one), starting off with only half of the salt. Blend it all up until smooth then taste and add more salt as needed. Blend to incorporate it after each addition. Remember that this is feta so it should have quite a salty edge. I like to use a full 2 teaspoons in mine.
  • Serve straight from the blender, or pack into a container and refrigerate for a few hours for a firmer, spreadable cheese. If you want to be able to turn it out for use on a cheese board, line the container with cling-wrap so that you can easily remove it once it's set.
  • Line an oven proof pan/dish with baking parchment. A square or rectangular shaped pan/dish is best if you want to be able to cut perfect cubes once it's ready. A loaf pan will work well. It doesn't matter if the cheese doesn't fill the container. You just need the cheese to be between 1 and 2 inches deep once it's in there.
