I found a version of this recipe in an old Southern Living Cookbook. I did make a few adjustments that I thought would elevate the flavors. Steps:
- 1. Preheat oven to 350 degrees F. I have listed the ingredients I used to make these cookies. Cream the butter and peanut butter in a large bowl.
- 2. Beat until mixture is creamy and smooth.
- 3. Add in both sugars, Vanilla bean paste or extract, and eggs. Then beat until blended together.
- 4. Add in 1/3 of the sifted flour mixture, and beat, then add in some of the milk and beat again.
- 5. Chop peanuts until broken into small pieces or use a kitchen hammer or food processor.
- 6. Now add another 1/3 of the flour, along with the chopped peanuts & milk.
- 7. Add in the remaining flour.Beat until batter is creamy and smooth. Grease or spray several large cookie sheets with cooking spray, and drop cookie dough onto sheet pans with a teaspoon, or if you prefer larger cookies use a tablespoon. Space at least 2 inches apart.
- 8. Place in preheated 350 degree F. oven and bake for 12 minutes or less, depending on your oven.
- 9. Remove cookies from sheet pan and place on cooling rack to cool completely,then transfer to a large platter or plate.
- 10. Serve with your favorite beverage, milk, coffee or tea. Enjoy these cookies they're delicious.

- Mix sugars, peanut butter, shortening, butter and egg in large bowl. Stir in remaining ingredients. Cover and refrigerate about 2 hours or until firm.

BETTY'S PEANUT BUTTER JAM DROPS (COOKIES)
Holy cow, these jam cookies are fantastic! The peanut butter flavor mixed with the sweet, tart jam is perfection. After baked, the cookie remains soft in the middle with wonderful lightly crisp edges. We used blackberry and strawberry jam in ours. Yum! We liked them best when they were a little warm.

Steps:
- 1. If you are not refrigerating the dough, preheat the oven to 320F/160C, line baking trays and put aside. If you are refrigerating the dough, leave this step until after you have removed the dough from the fridge.
- 2. In a large mixing bowl, cream the butter, sugars, and vanilla.
- 3. Add the eggs and continue to beat.
- 4. Add the flour and baking powder. Stir until combined.
- 5. Cover the dough and chill for 30 minutes - this is recommended.
- 6. Roll walnut sized pieces of dough and slightly flatten with your fingertips. Using your thumb, create a dip in the middle of the dough and fill with the jam.
- 7. Bake in the preheated oven, on parchment lined baking sheets, for about 12-13 minutes. The edges should be golden.
- 8. Cool completely on the trays.

- Adjust oven rack to low center position. Heat oven to 350 degrees. In a medium bowl, sift flour, baking soda, baking powder and salt. Set aside. Place peanuts in a food processor and pulse until the texture of bread crumbs. Set aside.
- In bowl of electric mixer or by hand, beat butter until creamy. Add sugars and beat until fluffy, about 3 minutes, scraping sides as necessary. Then beat in crunchy peanut butter until fully incorporated, followed by eggs and vanilla. Gently stir dry ingredients into peanut butter mixture. Fold in ground peanuts just until incorporated.
- Line a baking sheet with parchment paper. Drop dough onto sheet in spoonfuls a little bigger than a golf ball, about two inches apart. Dip a fork in cold water and then press the back into dough, repeating to make a crisscross.
- Bake until cookies are puffed and slightly brown along edges, but not top, 11 to 12 minutes. They will not look completely baked. Cool cookies on cookie sheet until set, about 3 minutes. Transfer to wire rack to cool completely. Repeat with remaining dough.
