Steps:

  • Bring coconut milk to a boil in a 3.0 large skillet; do not burn.
  • Add rice and salt; cook on medium heat; you must stir until rice is tender and almost dry, about 15 to 20 minutes.
  • Stir in 3/4 cup cup brown sugar; lower heat and cook, covered, for 5 minutes.
  • Spread cooked rice mixture in a greased foil lined 8 inch pan.
  • Combine the remaining brown sugar and the 3/4 cup thick coconut milk.
  • Pour on top of rice in the pan; spread evenly.
  • Broil in oven for 5 minutes or until top is brown.

Steps:

  • Boil coconut milk and rice with salt.
  • Boil until quite dry.
  • Lower heat and add brown sugar.
  • Melt butter and brush bottom of baking pan.
  • Pour rice mixture in pan.
  • Pour coconut cream and sugar on top.
  • Bake for 15 minutes or until golden on top.

  • Wash the glutinous rice. Drain. Then add 3 cups water to cook with. Cook in rice cooker or cook in medium heat (just like how you cook regular rice). When cooked, set aside.
  • In a large pan, combine coconut milk and sugar. Stir until the sugar is completely dissolved. Then cook in medium heat until the mixture becomes thicker. Stir occasionally.
  • Once the mixture is thicker, add salt and cooked glutinous rice. Mix well until combined. Cook until the sauce dried up and the rice becomes sticky. Stir occasionally.
  • When the glutinous rice becomes sticky and hard to stir, it’s ready. Transfer to a dish or container lined with banana leaf or greased with oil. Flatten the top using spatula. Set aside while cooking the latik topping.

  • Combine glutinous rice and 4 cups of coconut milk in a cooking pot. Heat and let boil, then reduce heat and cook while stirring until the texture thickens. This process can range from 18 to 20 minutes, or even more.
  • Add 1 1/4 cups of sugar and salt. Continuously stir and cook for 10 more minutes or until the rice is completely done. The texture should be very sticky.
  • Meanwhile, arrange banana leaves in a 9 by 13 inches baking pan. Transfer the cooked sticky rice to the baking pan. Set aside.
  • Make the topping by heating a sauce pan and combining 2 cups of coconut cream and remaining 1 cup of brown sugar.Let boil and simmer while stirring once in a while until the texture thickens.
