DROP BISCUITS
Drop biscuits are heavenly, and considering how little work they are to put together, they're also a real kitchen miracle. A few pantry staples and a hot oven are all you need for crunchy golden biscuits with soft interiors. They are excellent on their own, but a bit of butter and jam doesn't hurt either. Once you've nailed the basic version, try stirring in some cracked black pepper and Parmigiano-Reggiano, finely chopped tender herbs or chocolate chips.

Steps:
- Heat the oven to 400 degrees. Line a rimmed baking sheet with parchment paper. In a large bowl, whisk together flour, baking powder, salt and sugar. Using a pastry blender or two knives, cut the butter into the flour mixture until it is the texture of coarse meal with some pea-size pieces.
- Using a fork, stir in the milk until just evenly moistened, adding up to 2 more tablespoons, if necessary, but stopping before the dough gets too wet. Scoop the dough into 8 rough mounds (about 1/3-cup each) and place them on the prepared sheets. Bake the biscuits until golden brown and a toothpick inserted into the center comes out with moist crumbs attached, about 20 minutes. Serve warm or at room temperature.

BISCUIT MINI-BATCH FOR TOASTER OVEN
A nice, little batch of fresh, hot, biscuits to make in the toaster oven when you just need a little something. Drop biscuits are no more trouble to make than opening a can of dough and you don't have to keep track of expiration dates. Of course you could roll them and cut them if you wanted, but I've always liked the crunchy bits you get from the texture of the drop biscuits.

- Pre-heat toaster oven to 425°F.
- Mix together flour and baking powder.
- Work in melted butter.
- Add milk and mix into a soft dough.
- Drop 6 biscuits onto a small baking sheet that will fit into your toaster oven.
- Bake 8-12 minutes or until done.
- Pay careful attention to the doneness because toaster ovens aren't as reliable in their temperature control as full-size ovens.

BILLY'S DROP BISCUITS FOR COUNTERTOP CONVECTION OVENS
I Love Biscuits and I have been searching for a quick and easy recipe to make in my countertop convection oven. Living in a hot climate - I don't want to heat up the house with the regular oven and besides, I only want a small batch. This is a quick and easy Drop-Biscuit recipe that makes six or seven biscuits. Plus, you can make it Vegan if you like!

Steps:
- Pre-heat your countertop convection oven to 450°.
- Mix the Flour, Baking Powder and Salt in a bowl.
- Stir in the Olive Oil and the Milk and gently mix it into a soft dough - do not over mix!
- Lightly spray a baking sheet with cooking oil or line with parchment or a silicone sheet.
- Drop 6 or 7 mounds of Biscuit dough on the sheet.
- Put them in the oven and turn the heat down to 425°.
- Bake for 10 to 12 minutes.

- In a large bowl, combine flour, baking powder, sugar, cream of tartar and salt. Stir in butter and milk just until moistened. Drop batter on a lightly greased cookie sheet by the tablespoon.
- Bake in preheated oven until golden on the edges, about 8 to 12 minutes. Serve warm.
