BISTEC A LA CRIOLLA ( COLOMBIAN STYLE SKIRT STEAK IN SAUCE)

This is marinated skirt steak that is cooked in sauce. In Colombia this is eaten by many families every week (my husband had it every Wednesday). Serve it with white rice and beans, avocado, and an arepa or corn cake. The recipe makes more hogao than is needed. Just drop the leftovers into your beans!

Bistec a La Criolla ( Colombian Style Skirt Steak in Sauce) image

Steps:

  • Place steaks between wax paper and pound with a mallet to 1/4 inch thickness; set aside.
  • In a large resealable plastic bag, combine oil, mustard, cumin, garlic, cilantro, and salt and pepper; add steaks, seal (squeezing out as much air as possible), and work marinade over all sides of the meat.
  • Refrigerate to marinate at least one hour, up to overnight.
  • Meanwhile, prepare the hogao; heat oil in a skillet over medium low heat, add tomatoes, green onions, garlic, ground cumin and cook until tomatoes soften, about 15 or 20 minutes.
  • Reduce heat to low and add in salt and pepper to taste and cilantro, cook until tomatoes break down, about 10 minutes more; remove from heat.
  • Heat a large skillet, over medium heat; add 1 tablespoon vegetable oil.
  • Place steaks into skillet and cook 3 minutes per side.
  • Add 1 1/2 cups hogao, cover and cook for 7 minutes more; serve.

1 1/2 lbs skirt steaks, trimmed and cut into 4 equal portions
1 1/2 tablespoons vegetable oil plus 1 tablespoon vegetable oil (for cooking)
2 garlic cloves, minced
1/2 tablespoon prepared mustard

BRAZILIAN-STYLE SKIRT STEAK

Skirt steak is definitely not something you hear of too much as being served by itself (nt in a fajita, that is), but now that I've mastered the concept of making it, I love to serve it as the main course for dinner and my husband can't get enough of it. He loves Brazilian steaks, which I had never attempted to tackle until a co-worker of mine told me the secret to great brazilian meat... SEA SALT! Who would've known?!

Steps:

  • Coat both sides of the steak in sea salt or kosher salt, either would be fine.
  • Pan-sear both sides of the steak, about 2-3 minutes on each side over medium-high heat.
  • Remove from pan and completely wrap steak in foil.
  • Grill or bake at 350 for about 30-40 minutes for a well done steak.
  • I usually serve this with a sea-salted potato (cover potato in sea salt, wrap in foil, bake for 1 hour on 350 degrees).

GRILLED SIRLOIN STEAK (COLOMBIAN CHURRASCO)

In some countries Churrasco is made from filet mignon, skirt steak, or beef tenderloin and pounded thin. In Colombia is made from sirloin (my grocery calls it London Broil cut) and is about 1 to 1 1/2 inch thick. It's marinated in chimichurri sauce then grilled or broiled.

Grilled Sirloin Steak (Colombian Churrasco) image

Steps:

  • Prepare the chimichurri. Combine the parsley and garlic in a food processor and process until finely chopped. Add the oil, 1/4 cup vinegar, water, 1 1/2 teaspoons salt, and 1 teaspoon pepper and process to make a thick sauce. Correct the seasoning, adding salt, pepper, or vinegar as necessary; the mixture should be highly seasoned. Place half the chimichurri in a bowl or crock for serving; pour the remainder over the meat. Cover and let marinate in the refrigerator, 30 minutes, turning several times.
  • Preheat the grill to high (or broiler).
  • When ready to cook, oil the grill grate. Drain the beef and place it on the hot grate. Grill, turning with tongs, until cooked to taste, about 10 minutes per side for medium-rare. Serve with the remaining chimichurri sauce.
  • it is normally served on a wooden cutting board. I cut it like london broil in thin slices across the grain.

Steps:

  • Combine all ingredients and marinate steak from 6-24 hours.
  • Remove meat from marinade, and let sit at room temperature for 1 hour.
  • Preheat BBQ grill to high heat.
  • Grill meat 5-6 minutes per side.
  • IMPORTANT NOTE: once meat is down on grill, do not move it around.let the grill do it's work. This is a high sugar content marinade and will give the meat a nice caramelized crust. Turn the meat only once. Check for doneness with a finger poke.
