Steps:
- Preheat oven to 350°. In a large bowl, beat butter, brown sugar and peanut butter until blended. Gradually beat in egg, banana and vanilla. In another bowl, whisk flour, baking powder and salt; gradually add to butter mixture, mixing well., Spread into an 8-in. square baking dish coated with cooking spray. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool on a wire rack. Cut into bars. If desired, dust with confectioners' sugar.

CHEWY MONKEY BARS
These are nice bars that are a little different from the regular crispy treats. I like the nutty flavor and all the different textures in them. You could very easily frost them with some melted chocolate chips too.

Steps:
- Combine marshmallows, honey, butter, peanut butter, vanilla, and salt together in a medium saucepan. Heat mixture over low heat, stirring constantly.
- In a 9x13 baking pan, combine oats, rice cereal, coconut and peanuts. Pour honey mixture over dry ingredients. Mix until thoroughly coated. Pack mixture firmly into pan. Cool and cut.

MONKEY BARS
This recipe is like banana bread, but is a moist snacking cake. Apple juice can be substituted for the rum, and pecans for the walnuts.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan. Place the raisins and rum in a microwave-safe bowl. Place in the microwave and cook on High for 1 minute. Set aside until needed.
- Stir the flour, baking powder, baking soda, and salt together in a mixing bowl. In another mixing bowl, beat the butter and brown sugar together until light and fluffy. Beat in the banana, buttermilk, vanilla, and egg whites until well blended. Gradually add the flour mixture, beating just until combined. Stir in the raisin mixture and walnuts. Spread the batter into the prepared pan
- Bake in preheated oven until the top is golden, about 30 minutes. Cool in the pan 10 minutes before cutting into bars and transferring to a rack to cool completely. Dust with powdered sugar.

BANANA MONKEY BARS
What to do with those last two bananas? Make these quick and easy cookies! This uses a yellow cake mix as a base and adds lots of goodies on top. This recipe is from Camilla Saulsbury's book Cake Mix Cookies.

- Preheat oven to 350°F
- Spray the bottom only of a 13 x 9 inch metal baking pan with nonstick cooking spray.
- In a large bowl beat cake mix, oil and egg until well blended and crumbly.
- Stir in nuts.
- Set aside 1 cup of the crumb mixture.
- Firmly press remaining crumb mixture on bottom of prepared pan.
- In a small bowl, combine condensed milk and mashed banana; pour evenly over crust.
- Top with butterscotch chips and coconut; press down firmly.
- Sprinkle with reserved crumb mixture.
- Bake 25-28 minutes or until lightly browned.
- Cool completely.
- Cut into bars.

HONEY OATMEAL CHEWY BARS
Quick to mix and quicker to disapear. I like to slightly underbake these for a more softer bar. Dont over bake or you will have rocks! For a really flavorful bar, toast the nuts and coconut in the oven while preheating...watch closely it will burn quickly.

- Preheat oven to 350.
- Cream butter, honey and sugar until light and fluffy.
- Add egg and vanilla.
- Mix together dry ingedients.
- Slowly add to creamed mixture.
- Stir in oatmeal, coconut and nuts.
- Spread into greased 13x9 pan.
- Bake 20-25 minutes in 350 degree oven.
- Cool and cut into bars.
- Store airtight with a piece of fresh bread to keep them soft.
