BITTER LEMON, HONEY & SWEET SIMMERED GREENS

Use any soft, quick-cooking greens,such as spinach, swiss chard or beet greens, for this recipe, but keep in mind that they have slightly different cooking times. The recipe comes from Eating well.com

Bitter Lemon, Honey & Sweet Simmered Greens image

Steps:

  • Seperate chard leaves from stems and ribs; wash leaves throughtly and roughly chop; if using stems, rinse and finely chop.
  • Heat oil in a deep saute pan or Dutch oven over medium heat; add cumin seeds and cook, stirring often, until fragrant, about 1 minute.
  • Add garlic and chard stems; cook stirring often, for 3 minutes more;stir in lemon slices.
  • Add the leaves in 2 batches, allowing them to wilt before adding more; add broth (or water), honey,salt and pepper; Cover and cook until greens are tender, 1 to 2 minutes more, Serve hot or warm.

1 1/2-2 lbs swiss chard or 1 1/2-2 lbs other greens
1 1/2 tablespoons extra virgin olive oil
1/2 teaspoon cumin seed
2 garlic cloves, thinly sliced
4 slices lemons, 1/8 inch thick, seed removed
1/4 cup reduced-sodium chicken broth, vegetable or 1/4 cup water
1 tablespoon honey
1/4 teaspoon salt (to taste)
fresh ground pepper

Beet greens, bok choy, spinach, kale, Swiss chard or any combination of greens can be used in this recipe. The greens can be served as a side dish, or under grilled fish or chicken

Sauteed Greens image

Steps:

  • Heat oil in large skillet. Add garlic and shallots and cook on low heat until soft and frangrant. (Add a bit of water if vegetables start to stick).
  • Add greens and toss with garlic mixture.
  • Add wine and bring to boil. When greens start to wilt, turn them. Cover and cook for a few minutes longer. Season with salt and pepper.

Bitter Greens Salad With Lemon-Mustard Dressing image

Steps:

  • In a small mixing bowl, whisk together the mustards and 3 tablespoons of the lemon juice.
  • While whisking vigorously, drizzle in the olive oil until thickened. Adjust lemon juice to taste, and season with salt and pepper.
  • Place greens in a serving bowl and toss with just enough dressing to lightly coat them. Reserve any remaining dressing for another use.

  • Cut the lemons into pieces, put in a saucepan with the water and bring to the boil.
  • Reduce the heat and simmer gently for 10-15 minutes, until the fruit is soft.
  • Add the sugar and stir until dissolved.
  • Remove from the heat, cover and cool.
  • Strain before using.
