Steps:
- Drain and mash black eyed peas.
- Combine all ingredients, except cooking oil, the 1 tablespoon salad oil is combined with all ingredients.
- MIx well.
- Drop by rounded teaspoons into hot cooking oil; cook until browned.
- Drain on absorbent towels.
- This may be made into patties and fried, it has a sausage taste.

FRIED BLACK-EYE PEAS
I make these with leftover cooked black-eyed peas cooked with ham hocks or smoked turkey from New Year's. I sometimes top with a fried green tomato or left over candied yams. Get creative with them. I've tried several variations. This is the basic version.

Steps:
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate.
- Mash the black-eye peas in a bowl with a fork. Crumble the bacon into the peas, and stir in the shallot, red peppers, and enough flour to make the mixture stick together. Season to taste with salt and pepper. Form the black-eye pea mixture into 4 patties.
- Melt the butter with the vegetable oil in a large skillet over medium heat. Cook the patties until golden brown and crispy on each side, about 4 minutes per side.

The original whiskey balls! i ALWAYS make these for Christmas and new years and bring them along to give out everywhere i go. i love them!

- we have a food processor that makes crumbling the ingredients up A LOT easier.
- take the wafers, pecans, cocoa and grind up.
- add your whiskey and mix (A LITTLE GOES A LONG WAY!) (I've tried jack, and crown, and I'm using wild turkey this year. crown has been the best so far).
- now, the recipe calls for 2 tbsp of Karo syrup, but i can guarantee you, you'll use more. (this is what holds the balls together)
- add the 2 tbsp and mix and start rolling into 1 inch balls.
- dip into the powdered sugar and your done. like i mentioned, you'll have to add more syrup as you go, but that's OK, it just makes it taste even sweeter! lol.

- In a sauce pan, sauté diced onion, minced garlic and diced red pepper in 1-2 tsp of olive oil (or water) over a medium-low heat. Lightly season with salt and pepper.
- While the peppers, onion and garlic are cooking, drain and rinse the black-eyed peas, then add them to a food processor and pulse until mostly ground (okay for a few whole beans to be left).
- Continue cooking peppers, onion and garlic until fragrant and onions are translucent. Remove from heat when done.
