PERFECT PORK ROAST EVERY TIME

Steps:
- 1. Place roast in a large deep pan. Dissolve 1/2 c salt in a quart of water. Pour over roast and add enough more water to cover. Place in the fridge for about 7 hours.
- 2. Remove roast and dry. Place everything but the Worchesteshire sauce in a plastic bag. Place the roast inside, seal, and marinate for 2 hours (more is fine).
- 3. Remove roast and place in heated and oiled sauce pan and sear on all sides well. When done, take a roasting pan and line with foil. Place roast in the middle, sprinkle the Worchesteshire sauce over, and 1/2 c white wine. Seal tightly with more foil.
- 4. Place in 400 degree oven for 2 hours or until temperature reaches 140. Take out and remove from the pan to a dish, cover and let rest for 30 minutes. Place all juices in the saute pan to make gravy.

- Place roast in a large baking pan. Arrange potatoes, carrots, onions and pumpkin around roast. Add water to the pan. Sprinkle meat and vegetables with sage, salt and pepper; dot vegetables with butter. , Bake, uncovered, at 400° for 15 minutes. Reduce heat to 350°; bake, uncovered, for 1 hour. Place the apples around roast; cover and bake until a thermometer inserted in pork reads 145°, 45-60 minutes, basting every 30 minutes. Let stand 10 minutes before slicing. If desired, thicken pan juices for gravy.

- Combine pomegranate juice and sugar in small saucepan. Cook over low heat, stirring until sugar dissolves, about 2 minutes. Pour into 4 1/2-quart CROCK-POT® slow cooker. Blend salt, garlic salt, steak seasoning and pepper in small mixing bowl. Rub mixture over roast. Place roast in CROCK-POT® slow cooker. Turn roast to cover with juice mixture. Top roast with pear and orange slices. Cover; cook on HIGH 6 to 8 hours or until tender. Serve with juice and fruit slices. DAD'S BASIC MOIST PORK ROAST
This is the best and most basic way to ensure a juicy, perfectly-cooked pork roast every time. This recipe really requires a good thermometer -- either a $10 instant-read type or, even better, the type that pierces the meat and stays in place while connected to an outside-the-oven monitor. If you can swing that, then try your favorite marinade or rub on this recipe. Use your imagination on the rubs and marinades, but ensure you bring your roast directly from the fridge to the roasting pan -- Dad's recipe works best that way.

- Combine oil, pepper, and salt in a bowl; rub oil mixture over pork and refrigerate while oven preheats.
- Preheat an oven to 475 degrees F (245 degrees C).
- Place a roasting rack in a large roasting pan; arrange pork on the roasting rack.
- Roast in preheated oven until pork with browned, about 30 minutes. Remove pork from oven and reduce oven heat to 325 degrees F (165 degrees C). Allow pork to rest uncovered at room temperature for 30 minutes. An instant-read thermometer inserted into the center should read between 115 degrees F (46 degrees C) and 140 degrees F (60 degrees C).
- Return to oven and continue to cook until pork is slightly pink in the center, 15 to 30 minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
- Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.

HARVEST TIME PORK LOIN
After trying a Swedish Pot Roast recipe that was outstanding I thought about using some of the same ingredients to do a pork loin. Here is the result.

- 1. Blend nutmeg, cinnamon, ginger, salt, and pepper together and rub over entire roast. Brown the meat on all sides in the oil at medium-high heat.
- 2. Add all remaining ingredients (except cornstarch and sour cream) to the pot. If cooking on top of the stove, cover and simmer for about 4 hours until very tender or place your Dutch oven in the oven at 300-degrees for about 5 hours.
- 3. Remove the meat and bay leaves from the pot and thicken the gravy with some cornstarch mixed in a small amount of water; stir in sour cream. Serve with wide noodles.

- Melt the butter in a large skillet over medium-high heat. Add the pork and cook until lightly browned on all sides. Stir in the garlic and onion, and continue to cook until the onion has softened, and the pork is firm, and no longer pink, about 5 minutes.
- Place the pork and onions into a large saucepan. Pour in the chicken broth, and season with salt, rosemary, sage, and the bay leaf. Bring to a boil, then reduce heat to medium-low, cover, and simmer for 20 minutes.
- Stir in the butternut squash, apples, potatoes, and carrots. Return to a simmer, then cook, uncovered until the squash and apples are tender, about 20 minutes. Remove the bay leaf and serve.

- Heat oven to 325ºF. On rack in shallow roasting pan, place pork. In small bowl, mix marmalade, orange juice, fennel, thyme and sage. Brush half of the marmalade mixture over pork.
- In large bowl, toss sweet potatoes and Brussels sprouts with oil, salt and pepper. Arrange vegetables around pork. Insert ovenproof meat thermometer so tip is in thickest part of pork.
