  • Add the raspberries, gin and lime juice to a shaker with ice and shake to blend. Strain over a glass with ice, add the tonic and stir. Add a few whole raspberries and a slice of lime.

1/4 cup raspberries, plus a few more, for garnish
2 ounces gin
1 ounce lime juice, plus 1 slice lime, for garnish
4 ounces tonic

Juniper Lime Gin and Tonic image

Steps:

  • Stir ice cubes in a glass and drain any water that accumulates. Add gin and juniper berries.
  • Twist lime peel to release lime essence into the glass. Add tonic water and stir. Garnish with the lime peel.

Blackberry-Lime Gin and Tonic Ice Pops image

Steps:

  • Combine tonic water and sugar in a small saucepan and bring to a boil over medium-high heat. Boil for 2 minutes and remove from heat. Stir in gin and let cool while you assemble the ice pops.
  • Cut lime into 6 slices. Cut each slice in half. Place 2 pieces of lime in each mold. Evenly divide berries among the molds.
  • Pour tonic water mixture into the molds through a funnel, leaving a 1/2-inch space on the top. Freeze for 8 hours, or overnight.

  • Take a six-hole lolly mould and push a cucumber slice and a mint leaf into each one. In a jug, stir the gin, tonic and sugar until the sugar dissolves and the tonic loses its fizz. Divide between the moulds, push in the lolly sticks and freeze for at least 4 hrs, or preferably overnight.
