CRISPY CHICKEN WINGS

Crispy Chicken Wings image

Steps:

  • Rinse and pat dry the chicken wings. Scatter the wings in a single layer in a shallow pan or bowl. Mix together the buttermilk and hot sauce in a large bowl and pour over the top of the chicken wings to coat completely. Cover and refrigerate at least 2 hours and up to 5 hours.
  • Using a deep-fryer or a large heavy-bottomed pot heat enough oil to come halfway up the sides of the pot.
  • Combine the flour with seasonings in a large plastic bag. Coat the chicken wings by tossing them in the bag and shaking off the excess. Fry the wings in batches until chicken is golden brown very crispy and cooked completely through, about 6 to 8 minutes. Drain on a paper town lined sheet pan and season with salt and pepper, if desired, while wings are hot. Transfer to a serving platter and serve.

1 (5-pound) package chicken wings
2 quarts buttermilk
1/4 cup hot sauce
Canola oil, for frying
3 cups all-purpose flour
1 tablespoon poultry seasoning
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons paprika
1/2 teaspoon chili powder

Buttermilk Fried Chicken Wings image

Steps:

  • Combine onion, garlic, hot sauce, salt, and 2 teaspoons black pepper in a large bowl. Add the cold buttermilk and stir to dissolve. Snip the wing tips with kitchen shears if desired. Add the chicken wings and be sure they are all coated well in buttermilk. Cover the bowl and chill for at least 2 hours, or up to 4 hours.
  • Prepare the seasoned flour by whisking together flour, kosher salt, paprika, garlic powder, onion powder, lemon zest, black pepper, oregano, cayenne, baking powder, sage, and dry mustard. Drain off excess buttermilk and dredge the wings in the flour. Place each batch of dredged wings on a wire rack as you go.
  • Let wings sit for 10 to 15 minutes.
  • Meanwhile, heat peanut oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Carefully drop the chicken wings into the hot oil, 4 or 5 at a time. Fry until golden, crisp, and no longer pink in the centers, about 5 minutes. Drain excess oil from wings on paper towels and lightly season with a pinch of salt while still hot. Continue with remaining wings.

Steps:

  • For the sweet hot sauce: Combine the ketchup, honey, brown sugar, sriracha, mustard, vinegar, cayenne and 2 tablespoons water in a large bowl and whisk vigorously until everything is mixed well.
  • For the flour dredge: Mix together the cornstarch, flour, granulated garlic, onion powder, paprika, black pepper and cayenne in a large bowl.
  • For the chicken: Heat a deep-fryer to 350 degrees F.
  • Cut the chicken into strips approximately the size of your thumb, making each strip as even as possible. Whisk together the milk and eggs in a large shallow dish for the egg wash. Roll the chicken strips in the flour dredge until evenly coated, shaking off the excess. Then dip in the egg wash. Then dip in the flour dredge once again.
  • In batches, place the chicken strips in the fryer basket and drop it in the oil, giving it a good shake to make sure they don't stick together. Cook until they all begin to float, about 5 minutes. (To insure they have been cooked all the way, feel free to cut one in half.) Toss them in a large bowl with some sweet hot sauce until evenly coated. Repeat with the remaining chicken.

Steps:

  • 1. In a large bowl, combine buttermilk, wing seasoning and hot pepper sauce. Add wings; toss to coat. Cover in a plastic wrap and marinate in the refrigerator at least 3 hours, preferably overnight. 2. Set up grill for direct cooking over medium-high heat (see page 19). Oil grate when ready to start cooking. 3. Remove wings from refrigerator; let stand at room temperature about 30 minutes. Remove from marinade; discard marinade. 4. Place on hot, oiled grill. Cook for 12 to 18 minutes or until cooked through, turning occasionally. 5. Serve with bleu cheese dressing, celery sticks and cucumber slices.

This blazing hot wing recipe is an alternative to deep-fried wings. They are baked instead of fried and stay juicy rather than crisp. I started making these about 5 years ago and they were an instant hit. I am always asked to bring the wings for all the parties we are invited to now.

Baked Blazing Hot Wings image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Arrange frozen chicken wings in a single layer in a shallow baking dish.
  • Bake in the preheated oven for 25 minutes, then flip wings. Continue baking until the skin is crispy and meat is no longer pink at the bone, about 20 minutes more.
  • Meanwhile, cook and stir hot sauce, butter, and vinegar in a saucepan over medium heat until butter is melted, about 5 minutes. Add flour; whisk until sauce is smooth. Continue cooking until sauce is thickened, about 5 minutes more.
  • Drain grease from chickens wings and let stand for 5 minutes. Transfer chicken to a large bowl and add sauce. Toss to coat.
