BLUE CORN CORNBREAD
Corn bread made with blue cornmeal and more of almost every ingredient you would put in regular corn bread. It is almost cakelike. This is a pot luck winner.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
- Mix cornmeal, flour, baking powder, sugar, and salt in a bowl. Sift 3 times.
- Stir the eggs and milk into the cornmeal mixture. Place the butter in the prepared baking dish, and melt in the preheated oven. Mix hot, melted butter into the cornmeal mixture. Transfer cornmeal mixture to the prepared baking dish.
- Bake on center rack in the preheated oven for 30 to 35 minutes, until the edges of the cornbread pull away from the sides of the dish, and a toothpick inserted into the center comes out clean. Let cool 10 minutes before cutting.

- 1. 1 wide-mouth pint canning jar 1 Cup yellow corn meal 2/3 Cup sifted flour 1/3 Cup sugar 4 Teaspoons baking powder
- 2. Instruction In a large bowl, thoroughly mix all dry ingredients. To package in jars: Wash, rinse and dry canning jars, lids and bands. pre-mix ingredients thoroughly before placing in jars Decorate as you wish To package in bags: 1. Place cornbread mix in jar 3. Cut 12-inch lengths of craft ribbon. Tape craft ribbon around paper bag. make a tag with recipe instructions
- 3. (include on gift tag): Texas corn bread 1 jar Texas Cornbread Mix 1 egg 1 cup milk 1/4 cup soft shortening (Crisco) Preheat oven to 425 degrees. Grease one 8-inch square pan, or 8-inch cast iron skillet, or cast iron cornbread mold. Place cornbread mix into bowl, mix thoroughly. Add egg, milk and shortening. Hand-beat until smooth, about one minute. Bake for 15-20 minutes until done
GIFT IN A JAR: DOWN HOME CORNBREAD MIX
This is another easy recipe! It is always appreciated! I sometimes give a little jar with honey or my home made pear honey, and always a jar of home made jam or jelly. This recipe is great for anyone, but seems like all the single guys like it the best!

- 1. In large bowl: Mix all ingredients together well.
- 2. Spoon 2 cups of mixture into dry sterilized jars. Wipe the rim of the jars. Place lids and rings.
- 3. Make the following recipe cards: Preheat oven to 425 degrees. Down Home Cornbread: 1 jar cornbread mix 1 large egg 1 cup milk 1/4 cup Crisco shortening Put all ingredients in a bowl and mix together well with a fork or a whisk until smooth (for about 1 minute...do not over beat). Grease a 8-inch square pan. Pour in the batter. Place in oven. Bake at 425 degrees for 20 to 25 minutes.
- 4. Cut 6-8 inch circles from cloth. Place a circle on each jar. Secure cloth in place with a rubber band. Cover the rubber band with a pretty ribbon, put recipe card on the ribbon and tie a pretty bow.
BLUE CORNBREAD
Blue cornmeal can be found in natural food stores, or from Bob's Redmill company. ETA: After making this, I think I will double the ingredients next time, but still use the same size pan and possible increase cooking time, as my batch turned out very thin.

- 1. Preheat oven to 350°F. Lightly coat an 8-inch square baking pan with nonstick cooking spray.
- 2. Blend the dry ingredients together in a mixing bowl.

- In a large heavy saucepan, combine blueberries, sugar, vinegar and kosher salt. Bring to a boil over high heat. Cook, stirring constantly, 5 minutes. Cool completely. Refrigerate, covered, overnight., For cornbread, preheat oven to 350°. Combine milk and lemon juice; let stand briefly. In another bowl, whisk next 5 ingredients. In a small bowl, microwave butter and honey on high for 30 seconds; cool slightly. Whisk eggs and oil into milk mixture (mixture may appear curdled). Add butter mixture; whisk until well combined. Add flour mixture; whisk just until combined. Fold in jalapenos., Pour 2 cups batter into a well-buttered 10-in. fluted tube pan. Spoon half to three-fourths of blueberry quick jam over batter. Cover with remaining batter. Bake until a toothpick inserted in center comes out clean, 30-35 minutes. Cool 10 minutes; invert onto a cake plate or serving platter. Drizzle with remaining blueberry quick jam.

- Place a well-seasoned cast-iron skillet in the oven to warm for at least 5 minutes.
- Gently melt the butter and shortening in a small saucepan over low heat. Add the serranos and garlic, and sauté for 10 minutes. Sift together the flour, cornmeal, sugar, baking powder, and salt in a large bowl. Beat the eggs, lightly in a medium bowl. Add the serranos and garlic, and sauté for 10 minutes.
